    If you use 1/4 tsp bicarbonate soda in your mix just prior to cooking you'll have a lighter fluffier texture under the crisp outside ( my father taught me this:) )

      That's how I make my falafel, I am from Jordan and we also mix something else just before frying or baking and let the mix rest.

    I just made this falafel for lunch, omg it is scrumptious!! for years I've tried many different falafel recipes, this one is the most simplest and the tastiest and they are so light and fluffy. Thank you Ryoya!!

    I love falafel too! I like to make mine with black beans which just pumps up the antioxidant value. Gorgeous video as always.

    I thoroughly enjoyed watching this set of videos. Have Chickpeas soaking ready to make this for tonight.
    I love the camera angle from above, a cook's eye view makes it so much easier to imagine doing it for oneself.

    Chick peas I love! Falafel sandwich, can't live without it! First time I did falafel I used canned chickpeas....big mistake! Now, organic mostly ( if I can find them ) I cook with. I still have to try your recipe...will get back to you if you pass the taste test! But no doubt you will! Very inspiring young man that you are! Thanks

    Every falafel recipe I tried asked for cooked as well as soaked chickpeas, and they always fall apart while frying! I didn't know I can just soak them!

    Nice.. I do it quite the same way.. I add a little bit of floor and 1 tsp soda powder, to make it more airy, less dense

    I am surprised that you only talk about soaking the chick peas and not boiling them. Are they raw before frying? Thank you for your wonderful videos. Greetings from Portugal!

      +João Garcia Chickpeas can be had raw. I grew up eating chickpeas that are only soaked and not boiled or cooked in any other way. They're like mung beans. Soaking is enough. :)

    what can we do with the leftover frying oil? do we just discard it?

      Abby Kuo I don't usually deep fry anything so I put it into a compost box after using several times. oil helps to ferment other materials in compost.

    So that's how you make falafel :-D. Ate it once and wonder what it was. So, original recipe use parsley or coriander? Different taste it will be. And the one I ate didn't fluffy, it was dry and kinda hard to eat. Not crunchy either, but it hold a good shape like a real tennis ball. :-P Maybe no baking soda for that one.

      Moc Lan You don't have to adjust the amount. just put them into oven and bake maybe for 20 - 30 minutes at 350℉ / 180℃ :)

    How come my falafel dissolved in the frying oil? I used chickpeas in a can.

      Might have been too dry.

      Falafel can only be made with raw chickpeas soaked overnight. They will still be raw at this point. The canned chickpeas are already cooked and too soft. You cannot make falafel with that. You can make hummus with canned chick peas though.
