How To: The Taco Fold

  • I'm wearing gloves today because salami is sticky and we're going to be touching it a lot and I just don't want to be touching it with my hands before people are eating it. So this is kind of a nice thing to do. Also keeps you from needing to wipe your hands down all the time. We're going to do the taco fold today. This is super simple. You're going to fold your salami like a taco, but what happens when it just opens up like this? So the first tip is when you go to your cheesemonger and you go to your deli and you have them sliced salami for you to ask them to slice it super thin.
    You don't want it like - you want a full circle, sometimes they'll slice it too thin and they'll show it to you and part of it will be cut off because they've got it sliced so thin, but the thinner this is, the more it will fold to what you want. Also just the warmth of your hands can help this fold hold. So now it's holding much better and the good trick is sometimes when you have very thick salami just putting the next piece on it will help. And I have a little bowl here today, we're going to use this as a prop so that it will help once we start stacking these to keep them from all unfolding, but this is our taco fold. So we're just going to keep adding our little slices here. You know, you can do this as much as you want. We're doing this up into a bowl. So the bowl can kind of hold us down there. So you see how that opens? I can tuck another one in and the bowl is our secret. But if I had a great big board, I could sort of make this a whole line or snake down the middle. I can go from the middle and go out. Lots of different things you can do with it, but this is our taco fold.
