    Jollibee crew here for five years and I can agree kay Ninong. Pre mixed na ang gravy powder, nilalagyan na lang ng mainit na tubig. And about the resting time, pwede naman siyay i serve agad agad pero sobrang init. Nakakapaso siya. Dapat yung warmer time nya is hindi moexceed ng one hour. Then yung paglagay ng breading may steps talaga siya. Para kang nagbabanlaw ng labada tapos ipapagpag mo pa then rest bago isalang sa pressure fryer.

    You know Ninong Ry is not only a good TH-camr but also a good person. We can see he knows his stuff and he's dedicated to creating good content since his set up and equipment has gotten better over time. I remember watching the video where he bought the big Lifetime table so he could properly film preparing ingredients. But more importantly, he cares about his viewers. I think he watches his statistics and knows most of his subscribers are young and probably haven't cooked for as long as him. You can tell in this video, first, he decided not to use the pressure cooker to pressure fry since he knows its dangerous. Second, he intentionally used a mortar and pestle to grind the star anise even though he could have done it with his own dedicated spice grinder since he knows if one of his younger viewers does it, they may not have their own dedicated spice grinder like him. Good looking out for the future chefs of our country Ninong. Mad respect for you and your teams grind.

    As a fryman ng Jollibee ung manok bago namin lutuin dapat sakto sa temperature sa lamig. tapos marinated na sya, then may breading mix nadin. in short ung marinated na manok imimix mo lang sa breading mix then salang sa closed fryer. Para po makuha ung blister (ung sabi ni ninong ry na parang ano ano na maliliit) kailangan po ipress ng madiin ung manok sa breading

    9:25 yung corn flakes na sinabi mo Ninong Ry kung tawagin sa Jollibee yan as a Employee Blister po ang tawag dyan at nakukuha namin yang ganyang Appearance ng Chicken Joy kasi parang minamasa namin ang manok sa loob ng malaking Pan. Yung luto mo na manok Ninong Ry Smooth skin ang tawag dyan kasi wala syang Blister. At yun nga nakukuha namin yung Blister na yan dahil parang minamasa namin ang manok sa loob ng malaking Pan na may Breading yun lang😊 Dahil dito sa content na to bumalik yung ala-ala ko nung Fryman pa ako sa Jollibee nag work ako ad a Fryman sa Jollibee ng Almost 3yrs😊

    -crew here! yes nong ry, pwede po yun ibigay kahit kaka-up lang from fryer. pero may sinusunod po kasi sa jabi na FIFO (first in first out) rule. bale yung mga unangk joy na nilagay sa warmer yun muna ipapaubos, kasi meron din yun na holding time na sinusunod.

    Hi Ninong Ry, just to share lng po this is based on my experience us a previous staff of fast food, in able to achieve a flakes on fried chicken.
    They bread the chix, shake, dip on water, bread again and use seesaw basket pra magkaroon Ng flakes. And about the breading, they use there breading with secret recipe, eveb the marinated mixture. All chix po, come from chiller before breading. Hoping makatulong. Tnx po. Always watching ur vlog..☺️

    To make a proper Gravy, try with mushroom mix powder (knorr), white pepper fine powder, a pinch of fine black pepper, chicken powder or chicken broth (replacement sa water), All Purpose Flour, and used oil. Yung process ng Jollibee gravy is through emulsification (present) and granulation since wala namang proper machine to do so, its better na one time, big time yung process.
    Yes, yung proper process ng chicken is through brining within 4hrs to 10hrs of standby and chilled, chicken in commercial fast food eeh ready-to-cooked brined packaged na, basa mga yan and madugo onti.

    Ninong ry nag work po ako sa planta ng manok at isa po sa client namin ay ung jollibee chicken joy.meron pong marinade na secret powder na hinahalo sa chicken at doon po hinahalo sa tinatawag na tumbler.para pong washing washine na malaki at after po mahalo dun ng 20 minutes.ay tsaka po ipa pack na pang jollibee.Kaya ung chicken po ng jollibee ay malasa dahil sa planta palang po may marinade na po ang manok.sana po mabasa niyo🙂🙂🙂always watching ninong ry💪💪💪

    Magkakaiba ang minutes in every part ng chicken… 1. Marinated Chicken, 2. Freezed Chicken 3. Thawed Chicken 4. Soaked in water for 30 secs. 5. Breading Mix 6. And Fry! Wag galawin para may Blisters, at di takpan for frying machine/open fryer or maging soggy yung manok o di malutong kapag di aabot sa saktong degree (150-180 degree Celcius) ang init ng mantika. Kay ninong ay soggy at oily konti, yung kay Jollibee may blisters o yung parang mga tinik2. Di dapat lagyan ng tubig ang breading mix… Maging soggy pa ang luto. Yan ang quality na hinahanap ni Manager… Yung gravy nila, ay walang nakatatak, just for Jollibee only. Powder at water lang yan Ninong… Niluluto ko in certain minutes. Dating crew here year 2009. Bawal mag refry yung galing sa warmer, tapos ibalik sa fryer. Malintik ka talaga ng Food Controller. Haha Pagnabasa ito ni Ninong, ang saya ko na. :) Pa shout po sa next video, fan ako eh. Hehe. Memorized na memorized ko yan kasi every now and may surprised evaluation sa mga crew for quality review o kaya may tinatawag na mystery shopper na titikim sa luto o mag observe sa galawan sa loob ng store.

    Good day ninong! Share ko lang po experience ko. Nagluluto po kasi ako at May mga suki kami na jollibee crew. Minsan nagbebenta sila ng mga under weight na chicken nila samin sa murang halaga. As in raw pa sya, walang breading. Then pinaprito sakin ng boss ko, sabi nya ung kanya ayaw nya ng may breading. So ginawa ko ung iba walang breading ung iba meron. Then nagulat ako sa lasa ng chicken since ung breading namin ng chicken is APF,salt & pepper lang naman.
    Ung lasa nya jollibee parin. Tapos ung unbreaded. Same taste sya, iba lang ung texture nila. So ayun may original tlga na mixture na pinang marinade sa mismong chicken nila. And hanggang ngaun iniisip ko parin kung pano nila napalasa ng ganun ung mismong meat ng chicken nila. Hehe

      Ikaw lng nakakuha ng tama, pag madalas ka kumain ng chicken joy, malalaman mo na yung mismong manok ay marinated na kaya iba rin ang texture ng manok at distinct ang lasa ng jollibe compare sa ibang fast food, nakabrine yan ng matagal sa ibat ibang seasonings.

    Ninong dati po ako crew ng Jollibee. nasa breading po lahat ng flavors yung chicken nila fresh chicken lang tlaga from Bounty fresh. pressure cooker po gamit 13mins po yata hehe i forgot the temp. parang magic tlaga breading andun npo kasi lahat heheh. pero i beleive na pag si ninong gumawa expect the unexpected syempre.. proud of you ninong :)

    Ok na Ok yan NRY ang video mo sa JCJ lalo na paborito yan ng mga bata at isip bata haha....... para naman may idea sila paano magluto sa bahay ng fried chicken. As a crew ng Jollibee 2001-03 mostly sa franchised branch store, palipat lipat ng store naging Dining -Sodaman -Stockman, Pero nung Dec 2003 hanggang 2004 nakuha ako sa Company Owned ng Jollibee mas maganda ang pasahod at crew meal ng mga empleyado kaysa Franchise. at bibigyan ka ng chance na marotate mo ang boung station ng kitchen at thankful ako dun kasi marami akong nalaman na mga teknik o pamamaraan sa pagluto. yun sa JCJ ang dating procedure sa pagluto ay Breading at Luto sa Preasure Fryer hanggang sa nag upgrade na ang procedure Breading tapos ibabad sa Cold water with ice tapos Breading ulit at 2 na ang pwedeng gamitin sa pagluto yun Pressure or Open Fryer na. Yun manok ng Jollibee naka pre marinated na need mo lang ipa thawed kasi semi frozen yan sa pagka deliver, yun breading powder ay ready mix na pati ang gravy need na lang imix sa mainit na tubig para maging gravy sauce. at yun OiL ay Vegetable at laging bago yan Every day before mag oopen ang store..... para sa akin yun Service Crew na position mas maganda magsimula sa stockman dahil malalaman mo lahat ng raw materials at ang mga Wet and Dry products ng Jollibee. anong bansa galing yun shelf life ng produkto at yun maintenance and cleaning ng Water at Bevarage Station..... Thank you Jollibee sa.work XP .... pero 2022 na di pa rin kayo ang no. 1 worldwide pero extend na lang sa 2040 baka pwede na......hehe

    tingin ko ninogn Ry yun secret ng manok nila is nasa marinate kasi yun skin nila prang hindi nmn ganun ka coplicated yun breading plus yun oil na ginamit nila is hindi ata nabibili publicly. naalala nyo yun time ng lock down n nag benta si Jollibee ng uncooked chicken joy? yun mga tubig tubig dun hindi lang tubig yon, may marinate yun. prang nanoot n yun marinate ng matagal bago p sya i prito sa mga branches. cgro niluto nila yun sa marinate like pinakuluan hanggang half cook pra sumuot yun marinate hanggang buto tpos i store pa nila sa marinate hanggang sa makarating sa mga branches kaya nakahaba tlg ng exposure sa marinate yun manok.

      Sr. Crew ako ng mcdo for 5yrs. Hindi po nka marinte yung mga chicken. Fresh po na nka pack and didip pa sa tubig lalu na pag frozen.. nasa mix bredding yung lasa ng mga manok.. and yung flakes naman ay nirorol yun sa parang basket para mag karoon ng parang kilabot or flakes.. salamat po..

    nag experiment din ako ninong sa chicken joy, ang ginawa ko is water ang magic sarap mixture basically gumawa ako ng brine, and then babad lang overnight , for the dry batter , 70% afp ,30 percent cornstarch, konting salt, pepper, paprika, pecorino cheese and five spice, and to my suprise mejo kahawig ang lasa.

    Hi ninong ry, nakapag work din ako sa isang sikat na fast food chain. About po sa Breading, kaya nagkakaroon ng parang flaky na texture, kasi po ginagawa nila is double coating. Kapag na coat mo sa una then ibabad lang siya sa cold water about 2 seconds then balik sa breader then tanggalin excess na breader. Pag na prito napo yan nagkakaroon na siya ng flaky texture.

    I'm not a Jollibee crew but im a mcdo service crew sa kitchen ako kuya ry ako mismo nag cocoat at nag luluto ng chicken actually di nila binababad or something else Yung manok or nilalagyan ng Kung ano ano sa manok ginagamit namin minsan is magnolia chicken na frozen then nag thathaw kami Ng manok 3 araw Yun para lumambot Yun Ang standard ng thawing rack nong nag wowork pa ako noon di sa nag mamayabang nag ka award ako noon ng chicken expert monthly yun binibigay normal Lang Ang chicken nila sa flour sila bumabawi or harina nga so lagi ko sya naamoy Yung amoy nya is may pag ka lemon tas aromatic di ko alam Kung ano Yun parang sya normal na flour kung titignan pero Kung sa amoy doon mo malalaman amoy palang ulam na then Ang pag cocoating nya is dalawang beses una galing plastic then coating sa flour then babad sa water 6seconds ata standard ng pag babad sa tubig then coating ulit then Ang pag cocoat ng mcdo e may standard procedure then bago iluto may temperature ka dapat sunuin para perfect Yung manok na lulutuin mo hehehe skl pero iba pa rin chicken ng Jollibee sa mcdo Yun Lang Alam ko haha

      Tamah ka jan Sir.. d po ako crew ni mcdo o jobee pero galing po ako sa production ni jobee at mcdo, Nging QC aide po ako ng supplier ng breading ni Mcdo, kaya alm ko po proseso ng breading ng chicken, ang layo po ng process ni jobee ky mcdo.. Si jobee ksi minamarinate na sa factory, si Mcdo si branch pa po mag mmarinate ng chicken..

    ito secret - the chicken they are delivered from their supplier na marinated bags... the breading dalawa... dry and wet... ung frying dalawa depende sa store - Henny Penny (pressure fryer) ibaiba din models and ung deep fryer... mas mabilis ang pressure fryer - rule of thumb.. legs longest time to fry about 12-16 > fastest is breast and wings sa deep fryer... how to fry > thaw chicken > dip sa wet batter > coat with breading (dry) > fry. The gravy is another convo.. comes in bags.. either boil or prep boiling water then whisk > pag masipag store... bboil gravy mis pag tamad halo lang sa mainit na tubig then whisk (substandard)

      I agree nalasahan ko cheese powder. Sana makita tong comment. and nsa mantika rin. parang may timpla rin yung mantika. ang jollibee chicken kapg ininit mo sa ordinary n mantika nagiging common yung lasa. kaya nasa mantika and breading talaga.

      @@mistychanliongco6307 yong oil kasi na gamit nila after ilang gamit malasa na talaga yan kong baga na season na sya. Yong chicken nila wala pong marenate yan fresh talaga. Nagkakalasa lang gawa nang sa oil at breading. Pahabol lang sa breading po boss lagyan nyo narin nang oregano at maraming black pepper wag yong white pepper kasi may amoy yan. and most especially yong chicken powder at least 100grams.. tips sa pag luluto nang fried chicken wag nyo patagalin after nang coated luto nyo agad kasi pag pinatagal nyo pa yong harina sa manok titigas yan at hindi maganda yong texture nang manok after nang luto.

    Share ko lng ninong, nasubukan ko sa gravy eh yung mantika ng manok nilagyan ko ng onion, carrots and celery tpos kaunting butter and paminta. Nilagay ko sa oven then kinuha ko lng yung mantika nya. Then same gravy procedure then add a bit lng po ng mushroom soup powder tpos chicken powder.
    Sa chicken po, same din po. Nakabrine sa water, salt tpos may katas ng onion.
    Tpos yung friend ko ma chef sabi ang sikreto eh yung gamit na pang fry sa chicken eh yung mantika ng pinagprituhan ng fries nila para may kaunting kakaibamg lasa na di magaya.
    Sana mapansin mo at masubukan kc im sure mas lalabas yung lasa kc maramiham ka magluto so yung mantika mas magiging malasa.
    Additional shared info. Pag nilagyan ng flour yung chicken, wiwisikan ng kaunting tubig then imamassage to make it more bubbly.

    Boss I was working in Jolibee for years way back when I was still a college student. Nasa breading Mix lang po yung timpla ng manok at ang breading mx po ng Jolibee is orange ang kulay. Yung chicken po is from magnolia wala pong timpla as in normal na manok lang nasa breading mix lang po talaga at ang breading mix po ang nagbibigay ng napakasarap na timpla at amoy.

    Ninong nag work ako dati sa Jollibee as fryer Walang timpla yung manok nila yung flour talaga ang may timpla. Bago ilagay sa harina tatabsaw muna sa cold water then sa Flour...nag try ako dati ninong gumamit ako pressure cooker na pang fry then timmer lang. Then 7 spices ginamit ko medyo malapit naman sa JB chicken joy😁

    Ung first attempt na Chicken Joy na ginawa mo Ninong Ry actually po is Semi-KFC Original Chicken sya. Ung sa outside layer kasi nya dun sa Coating eh medyo kita ung mga tiny dots ng ground pepper. But still masarap parin kahit paano😊😊😊

    Admire your technique I work in big restaurants here in the states and we have fried chicken in our menu they invest pressure cookers just for this also breading is ok but after the first dip ., chicken should be submerge in in very cold water in colander and drain and back in breading put in rack for frying 15 minutes on timer / this is bone in we’re talking about ! Just sharing my experience

    Sir good day. Basi sa aking opinion sa breading goods na Yung mixture. Try nyo Po Yung unang ginawa nyo sa chix. Pero imbis na ilagay mo Yung egg sa chix. Nyo separate nyo Po Yung egg beaten before nyo ilagay sa powder mixture nyo nang APF and CS at medyo press nyo Ng kaunti Ang chix sa powder mix nyo. Para medyo hawig Yung texture na chix joy.
    Pwede din lagyan Ng kaunting curry powder
    Sa gravy naman Po try nyo mantika or butter hanguin at set aside lagyan Ng APF at i mix lagyan nang water ibalik sa kalan lutuin lagyan Ng beef cube. Sa palagay try nyo din Po lagyan Ng thyme or rosemary powder. Salamat and God bless you Ninong...

    I work in ck and jabi. Dahil mahilig ako magluto nag observe ako kahit babae ako nag iisang babae ako sa kitchen nag fryman ako nag induction nag back up lahat. Sa observation ko yung chicken naka brine sya sa pack my tinpla and flour, salt, fined npper, nutmeg, msg or chicken powder, garlic powder tpos sa coating apf, potato starch, nutmeg, star anis fine, salt msg or chcken powdeer then wisik ng cold water
    Mantika is around 170-178 c breast wing part is 11mins apply yung 4D sa pag coat and fry. Tpos shaking in between 8-10 mins

    Use milk instead of egg before coating. Sa coating flour cornstarch AND all-purpose seasoning. Makes all the difference.

    Nung college sa jollibee ako nag-part time. may open fryer sila at yung closed, henny penny tawag. Single coating lang ang manok, marinated na pagdating sa store. May special beading mix din na ginagamit. Before i-coat, dine-dip sya sa iced water para kumapit ang breading then fry. Depende sa chicken parts kung gaano katagal ofy, leg and thigh ang matagal, AFAIR mga 15 minutes. Walang egg na ginagamit.

      May egg powder. Gusto ko irecreate pag may egg powder na ko. 2 months ako nag research then sa 1st month, nakuha ko yung amoy ng secret spices. Then nagpatuloy hanggang sa na improved ko yung breading. Hindi na naglalasang biscuit dahil sa mixtures combination. Nakuha ko kahit 3rd class na harina ginamit.

Huwag ka nang gagaya sa ano't anong paraan at lasa ng iba kasi talagang sa iyo ang pinakamasarap. wala ng katulad nag iisa kang ninong ry.     Sir Ry, yung chkenjoy flavor probably the taste will start in the breeding of the chicken itself. Controlled temp., Food, water and vit. to have the proper meat. Then the breading is made in a mixing plant same process controlled temp., and ingrednts mixing time.
    Chicken is pre-marinated prior distribution on the jolibee comissary. For the gravy same process as the breading but they added parts of milk on the store.

      Exactly! Yung manok na gagamitin ang magmamatter talaga. Just like wagyu beef and ordinary beef, di mo pwedeng gawing lasang wagyu ang ordinary beef kahit anong compensate mo sa recipe.

      Yes po may standard ang manok ng jollibee . Hindi sila pwede kumuha ng kahit saan2 na manok ksi masisira ang quality ng product nila. Have you remember last time na nagka shortage ang manok nila pero sa market madami namang manok kasi may supplier talaga silang naka design or kinukuhaan ng quality na manok . Hindi pwede kung saan2 lang . Kaya iba ang lasa ng manok nila kesa sa ibang resto .

      Ano iyong commissary? Iyong manok ng Jollibee Kung magaling Ang panlasa mo is maalat it means babad sa asin at iba pang spices.
      Kapag Walang Gravy Hindi siya Ganon kasarap subukan niyo.

    Im working as a service crew po sa Jollibee. Lahat kami walang alam sa ingredients. Dahil lahat dumadating don ng timplado na. Like chicken naka marinate na sya and un breading ay naka set na rin. Gravy naka pack na sya iluluto na lang po

    Gusto ko ang style nag pag ba vlog mo Bruh, very realistic. Napa subscribe mo tuloy ako ng di oras. Nasa Aussie kasi ako at syempre trying to be good chief kahit akoy mechanic magawa lang sa kusina ang mga lutong pinoy na namiss ko dyan.. to be honest, hindi ako marunong at hindi ko hilig mag luto, pero syempre no choice kailangan kumilos dito kung gusto mo ng pagkain pinoy.. hehehe thanks for sharing your talent bruh.. happy new year..

    5 months ago buhay pa ang kuya ko.. siguro napanuod nya to, paborito nya si Ninong Ry, lagi nyang pinapanuod pag may bagong uploads. Miss na miss ko na ang kuya ko sobra.. cook ang kuya ko at marami syang natututunan kay Ninong Ry kasama na ng mga kalokohan haha. Pero miss ko na talaga si kuya. Minsan namin naging bonding yung panunuod ng mga vlogs ng paborito nyang vlogger, isa na dun si Ninong Ry.
