Barbeque Chicken - How to Grill a Whole Chicken

    BBQ Chicken on the Grill Recipe
    4 - 6 lb. whole chicken
    Juice of 2 lemons
    Avocado oil
    Your Favorite BBQ sauce
    Chicken Rub
    4 tablespoon RRR Mesquite (or your favorite all-purpose rub)
    1 tablespoon smoked paprika
    2 teaspoon of garlic powder
    1 teaspoon cayenne pepper
    2 tsp ground mustard
    1 tsp of salt
    2 tsp of coarse ground pepper
    Place the chicken on a cutting board and with sharp knife cut directly in half down the breast.
    Rub both halves with the lemon juice to generously coat. Let set about 10 minutes to absorb the juice. Then rub all sides of the chicken with the oil. Sprinkle with the rub mixtures generously to coat all sides of the chicken and rub in.
    Place the chicken in a casserole dish and cover. Place in the icebox for 2 hours. Bring chicken out 20 minutes before grilling.
    Preheat the grill a cleaned and oiled grill to about 400 degrees F. and move the coals to one side. Place the chicken on the hot side (directly over coals) to sear. Grill about 4 minutes each side.
    Move the chicken to indirect heat (not over coals). Bone-side down, close the lid of the grill and cook about 10 minutes and then flip to grill the opposite side an additional 10 minutes (meat-side down). Then flip again and grill a fina 10 minutes (bone-side down).
    Brush the top side of the chicken with the BBQ sauce. Shut the lid and cook for about 4-5 minutes.
    Lift the chicken and coat the underside with BBQ sauce and place back over the direct heat (over the coals) on the grill.
    Add more wood chips to the hot side of fire and move the chicken over the coals and cook for about 3 to 4 minutes basting often.
    With a temperature probe, grill until the internal temperature is at least 160 degrees F. Move back over to cool side and let set for about 5 minutes with lid closed (or until internal temperature is 165 - 170 degrees F.)
    Let rest about 3 to 4 minutes. Slice and serve.

    Probably the most underrated skill of a decent cook is patience. Decent cooking requires understanding heat, how to use it, and the patience to use it properly. Of course knowing what flavors work together is just as important. This sure looks good!

    This really brought some memories back to me. I remember when I was little and lived in Carthage MO, I knew a native american who had a horse ranch ( rest in peace Brent) and we used to do a very similar kind of chicken over an open fire. Now that I am older I keep thinking about how you said in some other video that you might not have money but if you have food you are rich. That memory of eating grilled chicken with my family and native american friend is a treasure that's priceless - food and friends sure means you are rich.     Kent trimmed on the butt end. I trim the "last part over the fence". It was there and then not there. Cut the fowl butt off. Nice cook.

    I love it when he says, 'huh, ain't got none of that...time for an infomercial'. Kent, your infomercials are the best I've heard...I never fast forward through them or change the channel. Jacques Pepin (the guy that cooked with Julia Child) always talked about the underarm and how it was sometimes raw from not getting cooked right.

    Love your style and loved the video. Feedback: I believe one should apply the same “rule of thumb” about turning every ten minutes to rotating the white meat(thickest part) and dark meat toward the heat. Our dark meat came out undercooked.

    Now when I was 5 or 6 years old my father would grab a chicken and chop off it's head. It was my little brother and my job to catch that chicken, a running around and blood spurting out of it's neck.. if any of you out there have not had this experience and you want to have a little fun with your kids.....get yourself a live chicken, chop off it's head and have your kids run after and catch it. Then show them how to pluck.
    This will leave an impression on your children that they will never forget.

      So, ...ok, ... I can remember when we would be visiting our relatives down in rural Kentucky, (back in the late 50’s, & early 60’s), ... & my Aunt Vena, would step out into the backyard, & snatch up a couple of yardbirds, by their necks, one in each hand, & swing them around like she was gonna use them as a lasso, ... & POP!she’d be standing there on the back porch with only their heads left in her hands, & those birds were running around the backyard with their heads off, ... (surprised by their stamina, even with no heads), ... giving them time to bleed out, & then dunked 4, or 5 times, into a big boiling pot of super hot water, ... so that the feathers could be plucked off, ... and she would keep the little ittybitty down feathers to make pillows with, ... and then the birds were prepped for frying, ... they had 8 kids, & my stepdad married my Mom, & I had a brother, & 2 sisters, ... so there were a great number of mouths to feed, ... and everybody always had as much chicken as they wanted to eat, ... other than her fried chicken, she made some truly delicious gooseberry pies, and a coal stove form of toast in the morning, where she would butter the toast, & slide it under the broiler for a minute or so, ... I was also introduced to squirrel brains, & scrambled eggs, snapping turtle soup, bluegill, crappie, bass, & catfish, ... they slaughtered their own hogs, & cattle, & shared it amongst family, & friends, ... deeply religious, they lived a farmers life, which, for many days & nights throughout the years, was from before sunup, till well after dark, ... I can remember, my Gram getting up before sunrise, rekindle the fire in the coal-stove, getting coffee started, & hearing her toddling off with the milk cans, to the barn to start the day, ...(back in those treasured days, life was simpler, but everybody helped, & worked to make life a little easier for everybody else), ... there was also plenty of time to go fishing, swimming, blackberry picking, , but there were chores to be done too, like churning butter, in a ceramic butterchurn, with a wooden paddle, ... shucking fresh corn, popping, & stringing beans, & peas, and gathering walnuts from trees that were over 250 years old, ... and so big around, that three grown men could not grasp each others hands, to encircle those trees, ... Grampa dug coal, on the edge of a coal seam to heat the house, & provide cooking fuel throughout the year, ... all on 212 acres, ... (damned sure do miss those days), ...

      spacedoutcowboy I used to live in Fayetteville, ark., and raised chickens when i was in highscool. You are absolutely right! To this very day i can't stand to buy a whole chicken from the store, i loose my appetite as soon as i hear tendons, bones, and cartilage snapping. It's even caused me to puke in the past. I can tolerate pre quartered breaded chicken from walmart or some place, but can't prep it if i tried. I worked too closely, too much, with chickens! 😫

    Folks rant and rave about ribs and brisket etc. but a good ole bbq chicken done right is hard to pass on the buffet line :) Home cooked is even better (as long as you don't fall asleep halfway through :)..speaking of getting your food robbed by the dog….here is a story......When I was a kid we lived in this kind of spread out neighborhood, one of them was almost right next door kind of. We had a weenie dog named Snoopy, we called her the rooster dog because she could walk across the top of a redwood fence, or out the window of the Buick and down the chrome and be waiting on the hood when we came out of Piggly Wiggly. That was back when people actually got together more and socialized. You know, Carry the hi fi down to the basement and have a neighborhood dance party, home brew and all. Anyway.....the close neighbors and us were all around my Dads pick nick table one late afternoon when Snoopy, who weighed all of maybe six pounds came dragging this huge roast beef across the grass in our direction wagging her tail like she did something good. The roast was resting on the counter of the neighbors house, no one knows how she got in their house, and the only thing we had in our dinky freezer was hot dogs to give them. Mom felt so bad and embarrassed (the men laughed), but looking back it was too funny.

    Man I love this channel! I just found it yesterday morning. One popped up in my Recommended for You list, and I thought "what the heck...I'll give it a try." Next thing I know it's late afternoon and I'd binge-watched CKR videos for about 7 hours! lol...what a great day. Being a lifelong cook from the South, about Cowboy Kent's age, I just immediately bonded with his down-to-earth, witty presence, and I found myself wanting to share a meal with him under the tent at one of his big ranch feeds. I hope his channel grows as more and more people discover the joys of cooking and keeping old styles alive for future generations. After watching Kent I pulled from the freezer half a backstrap from a whitetail buck I was fortunate to get back in December, marinaded it a few hours, and grilled it along with two big ole fillets from a 5 lb channel catfish my son caught this week. There's nothing like cooking great food for family and friends, and if it's food you killed/caught, processed, and preserved yourself it's just all the better. Thanks Cowboy Kent Rollins for inspiring me!!!

    wow.. I been wearing your videos out getting ready for Independence Day cookout. But dang I forgot it was lemon on chicken and I done bathed that rascal in lime juice and put in frig for overnite. I think it will be pretty good anyway especially after I put some of that special seasoning of yours that I got as a present not long ago. Thanks for all the help sir.

    Good lookin' half a bird. Couple of things. If I go out to the chicken house and grab one of them birds for grillin', I will be the one basted on the grill. One whole dressed chicken + 1 bird dog equals no chicken for papa. You got lucky to be left with half a bird. Our local grocery store meat counter offers what they call a Flat Chicken. That is a whole chicken split down the back, and laid flat, and seasoned. These come out excellent off the ole Weber. But going to try the next one with some of the mesquite seasoning and some sauce. Now if I could get rollers like that in my hair........

    I keep a cooking this Kent Rollins food I'm gonna have to get a bigger horse. Last time I jumped on him at the end of the day ol'billy said if I don't quite eating that I was gonna be the horse and he'd be the cowboy.
