I watched this video and it helped a lot. Turns out I was trying to adjust it for too long, and the salmon in my hand was melting.

Omg I've always enjoyed eating sushi to the point that I wanted to eat it every day. I thought if Id learned how to make it myself I could have it anytime I'm please, but I was intimidated by the thought of how difficult and long the process might be to make sushi until I saw your videos. I'm ready to try this, you're awesome Chef!
Really good video both the one before this when you break down the whole salmon, and this one where you make it into sashimi and nigiri sushi. I've done my nigiri a little differently than what you show here, but it does not turn out nearly as consistent as your process does here and I think I see why. I have not been closing the air hole before pressing it with index finger and I'm also starting with an oblong shape instead of a real rice ball. Drying the salmon momentarily on the towel makes great sense as sometimes my sushi will tend to separate from the rice. Problem I run into is no one here at my house wants me to put the wasabi on the rice and I think that wasabi may help hold the sushi together too. Definitely gave me some things to try that I expect will make my nigiri more consistent in presentation. Thanks very much.

This is one of the only videos that explains the process of shiojime and sujime. I have been trying to learn how to make sashimi, and all the other videos just says I need to freeze fish for 7-10 days. No wonder, the sashimi that I make taste nothing like the ones in the sushi restaurant. Thank you so much!! Life saver!!
This is the singular best how-to sushi video on TH-cam! I’ve tried about to make it myself maybe 6 times at this point since I found this video. It took a little bit of practice of course (I still find getting the perfect size sushi ball, and actually handling the rice without getting too wet or too dry hands, difficult still), but it’s crazy how well this video describes every step of the way in detail! Big, big thank you!!
I am very happy to hear that. I know handling sushi rice is very difficult in the beginning. Next time, you can soak your hands in a bowl of water for a couple of minutes before touching sushi rice. By doing that, your hands get moist, and you'll be able to handle sushi rice with a little bit of water. So sushi balls don't get too wet and breakable. Please give it a try. It works for me. I’ve made sushi using your video as a guide after looking at several others. This is the most straight forward and best. My sushi turned out well the very first time. One small suggestion, I’d remove the music background as it is distracting. Thank you for posting this helpful video!

Do you know if they're easy to sharpen? I'm considering getting a nice quality knife, but hesitant on the price especially if it gets dull and I can't properly sharpen it anyways
@@backflipsaresweet maybe it's just me but it's easier. I have an easier time keeping steady angle sharpening the right side (outside) of the blade than I do leftside(I'm right handed). Check out "Burrfection" on sharpening yanagiba knives. It's pretty good, imo.

I don't remember which salmon I used for the video. But Atlantic, Scottish, and Norwegian salmons are popular among sushi bars. You can simply pick good-looking ( meat is not breaking part )salmon from the show case of any supermarket.

Yes, I suggest you buy a rice cooker. Cooking rice in a pot is not easy. Mine is 5 cups panasonic ricecooker. I usually cook three cups of rice with it and rice comes out great. If I cook 5 cups, rice becomes a little wet. So it depends on how much rice you cook at once.
