Yes, more sourdough/ sourdough discard recipes please! I use stiff starter (50% hydration), so my discard is much less liquid. I might need to make a small amount of 100% hydration, so I can try this recipe
These were really good. I made a quarter size batch and whipped my butter with the sugar instead of melting. Made 8 cookies. I also used 70% chocolate chunks and milk chocolate chips. Finished off with a sea salt sprinkle and a few extra carefully placed milk chocolate chips. I was able to cook mine right after mixing with excellent results. Baking these at 350 F gave them plenty of time to form a beautiful browned bottom and that perfect crisp at the edges. I cooked mine directly on my dark pan. I dropped the pan on the counter at 8 minutes to get a good spread and they were done around 11 minutes. Letting them cool for 30 minutes made a huge difference from when they first came out and I took a nibble. I let them cool on a drying rack and the were absolute perfection at 30 minutes. Reducing the ingredient to a fourth of the size batch created a perfect dessert for my husband and I.

I had some left over starter after doing pancakes and got a loaf of bread started. I just found you (and followed you). I followed along with you step by step and it's going in the fridge now. They look amazing and I used up every drop of the starter I needed to used today...nothing wasted! I like discard recipies...some times I don't want to wait over night. Thanks!

My son took one bite and said “yeah, these are the kind of cookies a grandma makes. These are the best” 😂 12 minutes was perfect. Slightly gooey in the middle and a slight crunch on the edges. I did a couple at 15 minutes and they were still very good just crunchier

1st time I was actually able to make chewy chocolate chip cookies 😍🥰😍🥰😍. I used 50/50 ratio of type 550 flour & type 1850 spelt flour. Subbed for dark brown sugar & fig sugar (vs light brown & white). Also added just a pinch of pumpkin spice bc I can't help myself 😂 Popped it in the freezer vs fridge to bind the ingredients 10/10 👌
I made these cookies recently recently and they turned out absolutely delectable - nice and chewy with pleasantly crispy edges and a wonderful flavour. The only change I made is reducing the white sugar by about 20 g, as I usually do with chocolate chip cookie recipes. Thank you very much for the recipe! ^^

I haven't tried it with coconut sugar, but I think it's something I would try and could probably work. Let me know how it goes. :)

A trick for separating the egg yokes - get garlic and rub on your fingers and then use that to grab the egg yoke in the bowl.

The dough is a bit soft before chilling so that can make it more tricky, but there’s nothing wrong with doing that if you prefer and can manage it 🙂

So my question is whenever I feed my starter and I discard it. I could use The Leftovers to make the cookies or any other recipe.

I sometimes add a tablespoon of sour cream to my cookie recipe.
How much does the butter weigh after you have browned it?
It will vary. I would say somewhere around 170-180g. :)

The longer they chill the firmer the dough becomes, just let it sit at room temp until scoopable :)
