    The "recipe" for salsa is almost always the same, even though the ingredients change. Cook the fruits, garlic, and onion in some way before mashing everything together into a purée. Always salt to taste.
    Basic Red Table Salsa:
    1 jalapeño
    ¼ onion
    1 garlic clove
    2 ripe and in-season roma tomatoes
    Wintertime Red Table Salsa:
    1 jalapeño
    ¼ onion
    1 garlic clove
    10oz canned tomatoes
    1tbsp minced cilantro stems
    Creamy Salsa Verde:
    1 jalapeño
    ¼ onion
    1 garlic clove
    4-5 peeled tomatillos
    1 ripe avocado
    Additional variations:
    1. Make a raw salsa, then fry it in lard for "salsa frita"
    2. Make a raw salsa, then cook it down with a beer for "salsa borracha"
    3. Add chipotles for smokiness, habaneros for spiciness, or any combination of dried peppers

    It's been barely a week and a half since this video came out and I've already made two batches of basic salsa by myself. My takeaway: Man, I'm never buying a jar of salsa unless I absolutely have to ever again. I'm starting to get ideas for how to up my salsa game and start incorporating it into more meal planning.

    This is my favorite cooking content on TH-cam now. I feel you’re teaching how to cook, not how to follow recipes. You include a recipe but your notes about how we should experiment resonate with me. I know some people who treat recipes as gospel. But cooking is so much more fun when you just know what you can do, and make stuff happen.

    If you are really lazy like me, air fry the onions, peppers, tomato and garlic. About 10 mins at 400f, no babysitting required or heating up your entire oven. Then I peel them and put them straight into the blender. So easy.

    As a Mexican who's made salsa since i was 7-9 y/o, this is a well made tutorial for beginners. My only criticism is you need way more garlic,
    But that could just be my personal taste.
    I'd like to add to this videos by saying, you can roast the dried chillies over open flame, or frying pan, but do this with as much Kitchen ventilation as you can, including open windows and fans. Also, I use sweet onions like Vidalia onions, Or similar as a way of adding sweetness. Also lime is a very valuable ingredient that you should try mixing in. I use lime in usually half of all salsa

    Started making salsa every week a few months ago and have taken a random walk through salsa variations that is very accurately summarized here. Get those dried chilis in there, folks. Once you do, you won't go back. Tomatillo, onion, cilantro, a morita for smokiness, guajillos for body, and arbol for spice has been my favorite. Now trying to figure out whether I can tolerate enough spice to get a salsa that actually TASTES like habaneros.

      That last sentence is the exact reason why I tried growing habanada peppers. I wanted to mix them 50/50 with habaneros to keep the flavor but lower the spice.

      Btw, rehydrate those dried chilies and blend them in the dehydrating water as the first step in your blender. Otherwise you are going to have to make soup of your poor tomatillos trying to break down the dried chilies later if they all go in at once. Took me a few gummy/snotty batches to learn that lesson.

    the written recipes are a comfortable starting place for the anxious and less experience folks, so thank you. a younger me might not realize a whole onion in with a 10oz can of tomatoes and a tablespoon of cumin might not turn out how i expect.     I appreciate this video. We planted a large part of our new garden last year with salsa making in mind. We ended up with way too many tomatoes (especially given your recommendations), tons of tomatillos from just 2 plants (those things grow massive!), we tried making salsa from some recipes and it was very lackluster. Pretty discouraging after a full grow season of anticipation. Hoping to try more things this year and that salsa verde base sounds fantastic, especially since we still have tons of tomatillos left.

    Really nice clear well delivered video. Love the opinion that canned tomatoes should be used over out of season winter tomatoes. If the tomatoes aren't good they're not worth using. Love the preference for no recipes. It's way nicer to cook for yourself without dogmaticslly sticking to a recipe

    Great video. I'm a 60+ gringo who has been making salsa since I was a teen (standard spicy red table salsa but with cilantro, scallions and a bit of cumin added). I occasionally can it and gift it. In the last 5 or so years I have ventured into Salsa Verde (which we love). I have never tried adding dried chilies (other than some off the shelf Chile powder) to my recipe. Will definitely give that a try!

    Heck yes! This is a great salsa video. My favorite version is essentially shaq’s basic salsa with 3 or 4 garlic cloves, one poblano, one jalapeño, and one chili de arbol. It’s spicy and complex and delicious. And left over arbol chilies are great in all sorts of cooking experiments

    Thanks for making this. Just made my first homemade salsa (some salsa borracha with chipotles) and it it phenomenal. I live basically next door to a supermercado so I think this is going to become a regular thing.

    Thanks for sharing the mild version of the recipe 😃 My mum used to love spicy food, but after she had chemo, her tastebuds have changed and now she can’t handle spice at all!! I’ll have to make her some salsa, I think she’ll love it ❤

    Finally went to the big Mexican grocery store in town while I'm currently obsessed w making tortillas and tacos and Mexican food and it was awesome. Got home and make xoconostle salsa w Chile morita inspired by this video. Was super cool cause I had never had those things. Also bought a tortilladora and made chicharrones en frijoles negro w newly bought avocado leaves and epazote. Awesome stuff.
    And tip for the other not quite fresh masa-pilled yet - the maseca nixta masa product is actually so crazy good I was really surprised how immediately I was able to make perfect tortillas after I always struggled keeping the blue corn one perfectly hydrated

    I actually picked up the ingredients for a tomatillo salsa verde, but was worried about aerating too much as I've done previously. Hadn't cooked the ingredients down before and just blasted em on high in the blender (oops! lol). Thanks for the vid. Hey, I'm feeling a little extra motivated to try making my own salsa, today!

      or cook the whole thing after in a bit of oil to make that one whose name I already forgot it's in the video. Salsa Fresca is a thing but it's better known as Pico de Gallo and requires really good fresh ingredients for obv reasons,

    I appreciate this video cause i finally made salsa for the first time yesterday. I think the romas i used were too big cause by the time they were pretty much completely black, the inside was still kinda raw, but oh well, salsa fresca is good too! I picked up some dried chilis to try next time too!

    Was going to make pico for some tacos tomorrow since I've made that a few times but thanks to this video tried my hand at the red salsa. The basic recipe is definitely basic with a capital B, perfect for experimenting but bland on its own. Turned mine from mid to restaurant quality in a few minutes with some cilantro, cumin, sugar, and lime. Even made my own tortilla chips for the first time. Thanks for the push, I always forget how much fun it can be to experiment and try new things. Now I gotta dig out that old forgotten can of chipotle peppers in adobo I have somewhere and use that once I'm done with this batch.
