    Village cook - Koneswaran - is locally renowned in the town called Chavakachcheri, located in the Jaffna district of the Northern Province of Sri Lanka.
    He has been cooking for large events - be it wedding functions, family gatherings and birthdays - for over seven years, and continues to specialise in bulk quantity recipes. In one such family gathering, Koneswaran shared his mass-cooking process with one of his signature dishes - the Jaffna Chicken Curry (or Nattu Kozhi Kari [naa-tu ko-leey kur-ree], as enunciated by the Sri Lankan Tamil locals). This preparation of his contained approximately 10kg of chicken meat.
    The unique factor about this recipe is that it uses natively-bred village chickens (unlike the mass-produced broiler chickens commonly found in supermarkets). These country chickens (i.e. nattu kozhi) undergo a slower growing cycle but have developed disease resistance as they have not been subjected to human selective breeding methods observed in factory-farmed chickens. Comparatively, country chickens have a tougher texture (due to its higher muscle:fat composition) and also come with their eggs in tact as they are reared for a longer time period than broiler chickens, thus enabling them to lay their eggs.
    Consequently, this leads to a deeper and more complex flavour to be exhibited by the chicken upon cooking. However, Koneswaran’s recipe can still be applied to standard broiler chickens by marginally reducing the cooking time.
