Thank you for sharing! I have been making this recipe for the husband for a year! One of his favorite! I didn’t learn this from my abuela or mami, so thankful for you share our recipes. I will make sure to pass them on.
Here in Chicago we have a very large Mexican community and at the supermarkets they have these packets of ground shrimp shells which they use for their caldos. I buy them to give flavor to the broth. I did not see them at Sedanos when I was there a few weeks ago; but maybe they can be found in the Mexican stores down there. Because shrimp cooks so fast I don't want them to turn hard in the asopao. I also serve it with tostones and drizzle some home made vinagre, hot sause, or cut up jalapeno pepper. Your version is great, and like you always say YUMMY. I love your version of these recipes because you explain everything so well, they are easy to follow, not complicated at all, and when it's done you can sit down to enjoy a great meal. My mom used to make this for us when we were kids I loved it ❤️ she use to yell at me cause I would pick the shrimp out of the soup so glad I found it so I can make it and remember back when my mom use to cook it for us thank you. I sent it to my son so he could try it it's simple and yummy

Asopado de camarones : Ingredients : * 1 pound of uncooked, tail off Shrimp * Tails of the shrimp * 2 tablespoons of canola oil * 1 cup of chopped onion * 2 tablespoons of sofrito * 1 Sweet red pepper * 1/2 of a green pepper (diced) * 3 cloves of garlic (diced) * 1/2 teaspoon of sazón * 2 cilantro leaves * Salt * Pepper * 1/4 of a cup of olives * 1/4 cup of tomato sauce * 1 cup of rice * 8 cups of water * Tostones How to make : * Step 1 : On a pot, set level to 7 on the stove and add 1 tablespoon of oil, a couple of tablespoons on onions, 1 table spoon of the green pepper, one table spoon of the sofrito and a little bit of the garlic. We are now making the broth. Add the shrimp shells. Add cilantro leaves. Let it cook for a little bit. After it’s translucent and cooked. Add 4 cups of water. Let it come to a boil. We are going to cover and let it cook for 15 minutes. Then strain, put to the side and build the second part of the asopao. * Step 2 : add the second spoon of the canola oil. Add the rest of the onion, the rest of the green bell pepper, little sweet red pepper, the rest of the garlic and the rest of the sofrito. Cool it until it’s translucent. After it’s nice and cooked, we will add the 1/4 cup of tomato sauce. Season the shrimp with the salt and pepper to taste, then add to the pot as well. Sautéed for 2 minutes until our shrimps are nice and pink. After a couple of minutes, then take out 1/2 of the shrimps and put aside. Add the olives. The broth. Add the other 4 cups of water. Add the sazón and the one cup of rice. Cook until the rice is nice and tender. Maybe 20/21 minutes. After 20 minutes, after the rice is cooked, add the other 1/2 of the shrimps. Leave for another 5 minutes.
I came across this video looking to make this soup after my favorite restaurant was not making it for their weekend special due to the coronavirus. This is a very easy to follow recipe! I used to do it with a little variation like for example mixing the canola oil with achiote (anamato seed i think it is) for that distinctive flavor add also some vegetables like carrot celery and potatoes and at the end of the soup pour extra virgin olive oil mixed with fresh lemon juice and sweet peas.
