Do you use any of the leftover meat or onions after its boiled? I suppose after boiling for long they probably lose all their nutrients and flavor so probably best to throw it out.
@@ediba1267 You can try to eat the meat, but after 2 hours of boiling (and on to add it was already pre-roasted ready to eat chicken) that meat turns into mush. You can definitely eat it though, I make my family eat it haha. But best believe next time I make this recipe I'm gonna pull off all the meat first like he did and just use the actual carcass so the meat doesn't get mushy.

I always save the carcasses from my rotisserie chickens for pho or chao ga. Easy and delish! I also like the longer cook time on the carcass as it makes more of bone broth. Try cooking the bones for 24 hours in a crock pot on low with about 2tbsp of vinegar to make a bone broth.
I love using the Costco chicken carcass for my pho broth 😂 I’ve been trying to find the spice packets that you can add to the broth at a local market. Love your recipes Quang! ❤

Hey I’d recommend 3 crab fish sauce, but tbh any of them should be fine. If you want. Red boat is pretty good if you want a more premium anchovy fish sauce. As far as mushroom seasoning goes, any of them are fine. My family uses different brands and they all taste extremely similar

The best brand is Flying Horse, if you can find it. If not, the 3 Ladies, Rose, or Bamboo brands are all good for pho noodles or rice paper. I prefer the XL or L noodle sizes, but southern Viets like the thin ones.
Just one question: Why do pho restaurants give you so much broth in their pho? 75% or more just get thrown away. The broth takes all day to make, why waste it?
