  • The Andalusian and Spanish restaurant Aponiente (Cadiz) has been declared the most sustainable restaurant in the world by the 50 Best.
    It is not surprising. Ángel León has been carrying out and will continue to do so, an unfathomable and unfailing job for The Sea, its edibility and its sustainability.
    No one, absolutely no one before, in the world, had discovered so much about what the Sea can give us to eat, about how almost all fish and its use have so much nutritional and delicious value. On how to help protect the priceless price of how much man throws away from the fishery. Nor to denounce this terrible problem that depletes our seas.
    Nobody before ever knew how to cook El Mar without damaging it.
