How to Make Homemade Japanese Curry Roux (Recipe) カレールーの作り方 (レシピ)
Yum! And for lazy people like me: If you toast the flower in the pan first and then add melted butter, it takes about half the time to make roux and is less likely to have any raw flour lumps missed.
Nice tip 😄
How long do you toast the flour?
Do you keep stirring it with the whisk while it toasts?
@@RexyFanyou'll know when it's done it becomes more free and a Lil bit yellowish brown
@@RexyFan Generally, it depends on the amount of mixture and the color of the roux you're aiming. There are 4 colors of roux; white, blonde, light and dark brown. The darker the flavorful.
but, if you toast the flour, then wouldn't it just replace the time lost when making the roux?
Bake the flour on a cookie sheet to the color you are looking for before mixing and you will reduce the stovetop cooking time to a few minutes. You can even save the cooked flour for a couple weeks if you keep it in the freezer. It's an old Cajun technique.
How many temps do you recommend to cook the flour?
I love how you showed us the progress of cooking the roux. Arigato!
I've always loved curry roux blocks when I make my curry. I saw this video and knew I needed to watch! I am pleasantly shocked at how simple it is though. Thank you for the storage tips on your website!
Thank you Montana! It's not "exactly" same but I'd say it's close. If you look at the box of curry roux, it's a bit scary so many ingredients are very unfamiliar stuff... Hope you enjoy making your curry! S&B curry powder has been around (and first introduced!) and we are all familiar with this curry taste. So it's closest you can get when it comes to homemade.
@@justonecookbook thanks for the recipe! I will try, the curry in Argentina is kind of expensive.. like 100 dollars u.u
@@justonecookbook I think that commercial roux we normally buy has fruit/chutney added as it has a sweet base flavor, Thanks for the tutorial.
Yikes. The audio.
While I was watching Joshua Weissman's incredibly chaotic video on Japanese curry I was wondering if you'd done one. This is so much better on so many levels!! Thank you!
Aww thank you Rebecca! I have to see who you're talking about now. 😃
How does this version taste compared to the actual Japanese curry blocks you buy from supermarkets/Asian grocer ?
@@RexyFan Should be way better. Curry blocks already use the spice mix in the video (S&B) but are made with cheaper oils, here she uses butter and you get to control how good the better is (e.g. organic grass-fed butter) as well as how spicy it is (I like it very spicy)
The great thing about these kinds of roux blocks is you can add them to any soup or stew to thicken it up and add curry flavor, and they keep forever in the freezer.
I feel like I’ve hit the recipe jackpot following you. So excited to try all of your dishes out.
Thank you! I'm so happy! I have 900 recipes on the website (and I usually write more details for the blog posts). 🤗❤️
Probably the best tutorials about Japanese food on TH-cam... Thank you so much for this!! 🙏
Thank you for your kind words!
I've always wondered what magic that little cube is hiding. Now I know! I bet homemade tastes so much better.
Haha, I'd say if you look at the box of curry roux... lots of unfamiliar (chemical) ingredients that do the magic to the curry... but at least this homemade version is clean!
This is great. I used half the blocks last week and froze the other half and used them tonight. Thank you. Cant wait to try making more of your recipes.
Not very often food can bring tears to my eyes because of how delicious something is. Let me tell you, Japanese curry hits my heart, and this made my day. I will definitely be trying this recipe today! Thank you so much for sharing this, I had been buying the pre-packaged versions to make. Now i can have it all the time.
Thank you so much for the kind words. I'm so glad you loved Japanese curry. I hope you enjoy my recipe! 🤗
Yummmyyyy I remember eating curry every morning in Japan. It was my favorite thing I looked forward to in the mornings when I was there. That sounds weird, but I love savory breakfast and America leans towards sweet breakfasts.
Thank you!
Thank you so much for taking the time to create this video. I have had a hard time finding a recipe as simple as this that also accounts for gluten free needs. I just ordered the same curry powder that you used in the video and I am looking forward to trying this recipe out. Thank you again for all that you do!
Many of my GF readers have tried this recipe, so it should work! Hope you enjoy!!
This is awesome! Been craving Japanese curry but needed an alternative because I’m on a low-sodium diet and the packs they sell at the store have insane amounts of sodium in it. Thanks! 🤗
The best thing about making your own curry bricks is that it binds better the broth and it thickens it right unlike other premade curry bricks that in order to thicken you need to add extra bicks or cornstarch. Loved this recipe!
Now this is what I've trying to find for. Thanks for the video!
When I found your original homemade curry roux, it literally changed my world. 🙇🏻♂️🙇🏻♂️🙇🏻♂️
Aww thank you so much!!!!!!!! 🥰
Thank you Nami! It’s impossible to get curry blocks in Turkey. I was making curry with curry powder but now I can use this. I’m so excited and can’t wait to make a curry!
Hope you enjoy!!! This makes it more like Japanese curry roux (minus additives and preservatives).
I just watched a video on Bon Appetit in where the chef pretty much did this, but didn't brown the roux as long. I've never had Japanese curry, so I bought the box kind to see if I even like it. If I do I'm definitely going to try this method. Appreciate the simplicity.
omg so glad I found this recipe. My siblings go through those store bought curry blocks like crazy and I was always wondering if I could save money & make it at home. I might try this with 1/2 butter substitute & 1/2 butter, as well as a mix of AP flour & fibergourmet flour
I made this so many times with regular curry powder and it still tastes amazing
Wonderful!!
Buscaba un roux perfecto para una receta de curry y Hooooo que sorpresa más grata. Gracias por compartir estàs maravillas culinarias. Muchas, muchas gracias❤
So, those blocks are that simple? Wow. I will definitely use this
Hope you enjoy!
Thank you for the recipe! I needed to make a gluten-free version and tried it using rice flour and it turned out perfect.
So happy to hear that. Thank you for your kind feedback!
Amazing! I’m American and I love Golden Curry but now I can make it at home myself!
Hope you enjoy!
Hi, I’ve been wondering this for awhile. Since curry block only contain of flour, butter, curry, can I just put them all in my curry soup when boiling instead of making block like this?
Thank you! I'm going to have to experiment with gluten free flour, but I'm excited to get closer to being able to make and enjoy one of my favorite curries again!
Hi Toni! Many of my readers have used gluten-free flour for this recipe and it worked. Hope you enjoy!
Thank you for making this video! I have always wanted to try this curry, but the boxed stuff I've found contains wheat. I never thought to make my own; I can't wait to make this gluten free!
Hope you enjoy!
But this recipe uses flour too though!! How is it gluten free?
@@sakurachristineito6428 You can use gluten free flour. Check the description of the vid
Can’t wait to try! Have used the store-bought all my life.
Hope you enjoy!
It's also smart to fill a ice cube tray for perfect portions.
Thank you for this recipe. Very helpful.
Thank you for watching!
🧡💛🧡 It looks so delicious. You're very good at cooking. That's a good recipe. wow good Information. 🧡💛🧡
Thank you for watching my video!
I can't believe it is so simple!
And all the chemical and additives free! 🤗
I love this! I've been following your recipes for quite sometime! Thank you!
Wow its really amazing that even a curry can be this good! I love it! I thought it was always spicy but this look creamy! Definitely giving it a try! ❤
Hope you enjoy the recipe!
Merci pour ce partage, maintenant je les ferai moi même ❤
Konnichiwa JOC. Marc from Catalonia. I have followed your recipe, but with an added ingedient: green cardamom powder. It gives the paste that "Java" flavour. Thank you for sharing !!
I like how you made the curry roux. Lovely 😊
Thank you so much!
Thnks for the recipe I'm actually searching for roux lately
Oh wonderful! Hope you enjoy it!
I became a master o curry thanks to this channel. Thank u very much.
Aww thank you!! 😘🥰
I think ill try this next week!
thank you so much for this-
i dont know why i never thought of home made but for years iv been annoyed that its not possible for me to get my hands on curry cubes
i love cooking and for the past 2 yrs or so iv been making allot of Asian foods and i fail making curry dishes more often than not
have a feeling this wil be a grate help !
Thank you for watching my channel! I hope you enjoy my recipes. 🤗
Thank you for the recipe! When I was little I was always so happy to suddenly smell that my mother was making Japanese curry for dinner. I make it now a few times each winter. I thought there would be garlic in the recipe like S&B. I will add a little ^.^
Amazing! I thought it took more ingredients to make but the way you present this seems simple. I love curry food and I have the curry powder in my pantry ready to be used, thank you. 🤗❤
You can definitely spend a bit more time to make your own curry powder blend... but if you're used to Japanese curry, there is certain taste that people are familiar with, and S&B curry powder was the foundation of the Japanese curry culture, so it's a lot easier to just get this specific blend of curry powder and make your own roux with all the chemical and preservative free. :)
I like how putting the roux paste in an ice cube tray is NOT an option... 😁😘
Awesome, I worry about the bad stuff in the boxed roux that I've used for years and now that you showed me I could make my own, we can start eating curry rice again! Thanks a million!
Hope you enjoy the recipe!
thank you for sharing
Yum I will try it because This is not available in my country and I want to try Japanese Curry
Branded roux are not available in my country. But I wanted to make japanese curry. Thank you for the recipe
My pleasure 😊
This looks so yummy. I'm going to try this
Hope you enjoy!
Thank you for the recipe!! The curry blocks available at my local supermarket have more cumin flavor in them than I would like... now I can make my own and perhaps cut back on that particular spice a little... yay! :)
Hope this works out for you! Enjoy!
Thank you so much for making this video -- I'm going to make this tonight! :)
Im gonna try it. Thanks. 😊
That looks amazing! And the recipe looks so simple too! You wouldn't happen to know how to make a Kokumaro curry roux, would you? I would love to make a lot of those at home, Kokumaro curry is my fav.
Wow I wish I saw this earlier, I ran out of cubes and just had to use plain curry powder 🥲🥺😭
This looks so good!
Thank you for your receipt.
Will be making this soon can i use vegan butter as am a vegan i never had japanese curry roux before perfect for my after office meals with rice love your recipes making me hungry Thanks Ramya
It should work as long as it’s fat content is close to that of real butter.
@@nickdavis8881 will use coconut oil instead
Hope you enjoy!
I love your recipes !
Thank you Lidia! 🥰😘
Nice to see you in your video show, what famous food and drink in japan?
Terrific! Thank You!
Wow I was looking for this recipe just yesterday thnx it's expensive to buy the authentic one
And free from all the unfamiliar (chemical) ingredients we can't pronounce. 😆
Brilliant!
Oohhh how lovely! I love Japanese Curry and we make it easily 4 to 6 times a month so this will be nice to make our own. ♡♡
Thank you Autumn! Hope you enjoy!

So useful, Nami! I have a lot of butter to use and a lot of good curry, this is the perfect moment for this! Unfortunately, I have currently my dominant hand broken, so I'm thinking of trying with the Thermomix, I hope it turns out well. If you'd like, I'll let you know.
I'm sorry to hear about your hand. I had my shoulder surgery last year so I totally feel you!!! Wishing you fast recovery. I never used a Thermomix before. Hope it works!
@@justonecookbook thanks Nami! I just had surgery to my right wrist, I'm a cook and it's so bad not being able to.. well, do a lot of things. But having little projects as a distraction is good, I hope I'll be able to try this weekend :)
Looks so good!
Thank you!
Consulate General of Japan in Montreal brought me here - thx!
Thanks for the recipe. One question however, does the brick once you take out from refrigerator, melt at room temperature or stay solid like those sold at the supermarket? Thanks
Very nice 👍🏻
Thank you!
@@justonecookbook is it weird that you like some curry dishes and some you do not or maybe I'm just weird 😂
I just bought a tin of S&B Curry Powder to make my own Japanese curry from scratch. Something about the store bought blocks makes the flavor unappetizing after one bowl. I'll have to give this a try
Hope you enjoy! And remember, you can always tweak the flavors if you like! 🤗
Ahhh had you postes it only one day earlier! I just bought a package yesterday..
Next time! 🤗
Been on a really big curry kick as of lately, adding the store bought cubes to everything haha. Hopefully this will help me not have to make constant trips to the store all for some roux I can make myself now!
Hope you enjoy!!
A tip if I may: I've never been able to get lump-free gravy by adding roux to liquid like it says to do in all the recipes. What works for me is to heat the roux to melting in a pan and gradually add slightly less than enough liquid to double the volume, and work that into the "roux lump" each time. repeated doublings will thin it out quite quickly, and working the liquid in each time to maintain a homogenous texture will result in one big lump that's so thin it passes for creamy lump-free gravy, and I never tell anybody. ;)
Thanks for sharing. Can I use unsalted butter and instead of making blocks, use these ingredients straight in the pot as I cook curry?
0sm excellent 💥👍⭐💯
Thank you!

Looks great! Can't wait to try! What about conservation method? Do we keep it in the freezer? For how long?
Thanks for the recipe
1 month in the fridge or 2-3 months in the freezer. www.justonecookbook.com/how-to-make-curry-roux/
Hi! How do I adjust the recipe if I want to use fresh ginger and turmeric? I want to follow your curry powder recipe too.
Sharp knife😲
I enjoy these kinds of videos, so I subscribed. Your video is beautifully done and looks very delicious. Stay connected. :)
Hi :) can I add 1 tbsp of honey?
How did it become thinner the longer you cooked it? I used your measurements and ended up with a ball of dough!
Hello. Just tried this and when i mix the flour into the butter, it's really thick and not runny like this video.
Did you accurately measure the flour? I recommend using a scale for greater precision. Also, keep in mind that the process takes time, and it will become liquid after about 15 minutes of simmering. Hope this helps!
Should I make this cubes When I make Japanese curry?? Or just toss all ingredients in the pot ???
Thanks! Subscribed. Love golden curry but I couldn't eat it cause wheat.
Hope you try it with GF flour! Enjoy!
Thanks mam ji
Arigatougozaimasu!
Nami, I think you and I are on the same wavelength this week. 2 days ago I was thinking about making curry with beef. I have never had curry before and want to give it a try. I ran across this recipe on your website today and I think I will have a go at it Monday when I'm off. I tried finding mild curry in the stores in my town; however, they only had hot. Any recommendations for someone who is new to curry? Any comments welcome from any one. Thanks. :)
You can make it homemade (this recipe) and it's not spicy. My kids can eat it, so should be okay. :)
Forgot to say I didn't add cayenne pepper.
@@justonecookbook Thanks. I have one ingredient in waiting on. S&B Curry Powder.
Question, is it okay to mix a grated apple into this before cooling off and refrigerating (I like using an apple to even out the spice when i make it from scratch) ? Or should I add the grated apple separate when im cooking, once ive added the splid roux cubes into the pot im cooking in? Please and thank you for any tips.
I recommend adding the apple to the curry rather than to the roux cubes. Here is my recipe, and you can see how I added grated apple. I hope this helps! www.justonecookbook.com/simple-chicken-curry/
@justonecookbook thank you, thank you, thank you!! 🙏🙏🙏
Thank you so much for this! Now I can control the amount of sodium.
I dont have any garam masala and havent found any in stores can i substitute it with 6g of curry powder?
Thank you for this video. Noob question, why wouldnt you just add the ingredients used to make roux, directly to just make the curry? Would the taste profile be the same?
Because Japanese curry is made differently. In Indian cooking, for example, curry starts from the beginning. Japanese curry is more like a stew, so we add the roux after all the ingredients are cooked. Just different cooking method. :)
Regards thanks for the cool
Thanks for watching!
How long are the curry blocks fresh in the fridge? Or can i even freeze them? 🙏🏻
You can store in the refrigerator for 1 month or in the freezer for 3-4 months.
@justonecookbook ありがとうございます✨
Great video. Can you suggest a fat other than butter?
I have another curry powder brand can I use that?
this might save me a few bob to make....and the finish product looks exactly like the one i get in the shops[uk] ..although i will have to check on the price and availability of japanese curry powder..i guess that will be the definitive thing that will determine whether it will be cheaper to make or ..to buy :)
Some people said the curry roux box in their country is quite expensive... for me living in SF, it's not that expensive but a lot of people care more about what's in those boxed curry roux. It's very convenient, so I still use it sometimes but try not to use it too often and make this roux when I have time. 🤗
Is there a substitute for the curry powder if i cant find it, thanks
