- Learn how to make Japanese Curry Roux from scratch. Only 5 ingredients! This easy recipe will have you cook up many delicious pots of Japanese curry.

INGREDIENTS
3.5 oz (100 g) unsalted butter (7 Tbsp)
3.5 oz (100 g) all-purpose flour (plain flour) (¾ cup; use gluten-free flour for GF)
4 Tbsp Japanese curry powder (Use S&B Curry Powder for that familiar Japanese curry flavor; you can buy on Amazon: amzn.to/3E0pNzk)
1 Tbsp garam masala (Can't find it? You can skip and add more curry powder, or try adding other spices I mentioned in the blog post that you may have)
½ tsp cayenne pepper (optional for spicy)
salt should be added to the curry recipe you're making.

Yum! And for lazy people like me: If you toast the flower in the pan first and then add melted butter, it takes about half the time to make roux and is less likely to have any raw flour lumps missed.

@@RexyFan Generally, it depends on the amount of mixture and the color of the roux you're aiming. There are 4 colors of roux; white, blonde, light and dark brown. The darker the flavorful.
but, if you toast the flour, then wouldn't it just replace the time lost when making the roux?
Bake the flour on a cookie sheet to the color you are looking for before mixing and you will reduce the stovetop cooking time to a few minutes. You can even save the cooked flour for a couple weeks if you keep it in the freezer. It's an old Cajun technique.
How many temps do you recommend to cook the flour?
The great thing about these kinds of roux blocks is you can add them to any soup or stew to thicken it up and add curry flavor, and they keep forever in the freezer.

How does this version taste compared to the actual Japanese curry blocks you buy from supermarkets/Asian grocer ?
@@RexyFan Should be way better. Curry blocks already use the spice mix in the video (S&B) but are made with cheaper oils, here she uses butter and you get to control how good the better is (e.g. organic grass-fed butter) as well as how spicy it is (I like it very spicy)

Thank you Montana! It's not "exactly" same but I'd say it's close. If you look at the box of curry roux, it's a bit scary so many ingredients are very unfamiliar stuff... Hope you enjoy making your curry! S&B curry powder has been around (and first introduced!) and we are all familiar with this curry taste. So it's closest you can get when it comes to homemade.

Haha, I'd say if you look at the box of curry roux... lots of unfamiliar (chemical) ingredients that do the magic to the curry... but at least this homemade version is clean!
Yummmyyyy I remember eating curry every morning in Japan. It was my favorite thing I looked forward to in the mornings when I was there. That sounds weird, but I love savory breakfast and America leans towards sweet breakfasts.

The best thing about making your own curry bricks is that it binds better the broth and it thickens it right unlike other premade curry bricks that in order to thicken you need to add extra bicks or cornstarch. Loved this recipe!
I just watched a video on Bon Appetit in where the chef pretty much did this, but didn't brown the roux as long. I've never had Japanese curry, so I bought the box kind to see if I even like it. If I do I'm definitely going to try this method. Appreciate the simplicity.

You can definitely spend a bit more time to make your own curry powder blend... but if you're used to Japanese curry, there is certain taste that people are familiar with, and S&B curry powder was the foundation of the Japanese curry culture, so it's a lot easier to just get this specific blend of curry powder and make your own roux with all the chemical and preservative free. :)

A tip if I may: I've never been able to get lump-free gravy by adding roux to liquid like it says to do in all the recipes. What works for me is to heat the roux to melting in a pan and gradually add slightly less than enough liquid to double the volume, and work that into the "roux lump" each time. repeated doublings will thin it out quite quickly, and working the liquid in each time to maintain a homogenous texture will result in one big lump that's so thin it passes for creamy lump-free gravy, and I never tell anybody. ;)

Nami, I think you and I are on the same wavelength this week. 2 days ago I was thinking about making curry with beef. I have never had curry before and want to give it a try. I ran across this recipe on your website today and I think I will have a go at it Monday when I'm off. I tried finding mild curry in the stores in my town; however, they only had hot. Any recommendations for someone who is new to curry? Any comments welcome from any one. Thanks. :)
You can make it homemade (this recipe) and it's not spicy. My kids can eat it, so should be okay. :)

Thank you for this video. Noob question, why wouldnt you just add the ingredients used to make roux, directly to just make the curry? Would the taste profile be the same?
Because Japanese curry is made differently. In Indian cooking, for example, curry starts from the beginning. Japanese curry is more like a stew, so we add the roux after all the ingredients are cooked. Just different cooking method. :)

Hello. Just tried this and when i mix the flour into the butter, it's really thick and not runny like this video.
Did you accurately measure the flour? I recommend using a scale for greater precision. Also, keep in mind that the process takes time, and it will become liquid after about 15 minutes of simmering. Hope this helps!

大丈夫ですよ!インドのカレーパウダーも使ったことあります。でもやっぱり日本のカレーのルーの味にしたかったら、S&Bのパウダーあると、日本風のカレー味になります。

冷凍庫なら2、3ヶ月。冷蔵庫なら1ヶ月ほど。S&Bのカレー粉で作ったら、結構ルーと似たような味です。私はガラムマサラとか入れて、ちょっとだけ香りを出したりしてますが。カレー粉が普通に買えれば、安いかも。あとは、箱に入ってる添加物ないという意味では、とても健康的です!
