The white translucent thing in the dessert is attap seed, it's actually the fleshy core of the nipa palm fruitlets.

Hi Shinichi! The veges in the gan lao mian are mustard leaves, something you'll find commonly in Japan. The pale looking thing you wondered about in your Ice Kachang is attap chee (palm seed). And the green wormy thing is 'chendol' jelly. :) So glad you enjoyed eating our Singapore food! Tiong Bahru is more of a morning market, by mid afternoon most stalls are closed. Hope this helps!

Perfect video as I sit here in Sweden, eating some eggnoodles I fried with beansprouts, sambal, chopped wild mushrooms, a mix of nordic root veggies and some peanuts.
I can not believe how much you ate/worked in Singapore! No wonder you were so exhausted when you got home…. Don’t overwork yourself Shinichi, take time to enjoy also! That being said I didn’t even know what a Hawker was until now. Looks so good!

These look delicious! and so reasonable priced. Here it is almost impossible to find anything under that pice (if you're lucky coffee and a slice of pie). Love to try the wonton plate.
The sambal is nostalgic for me. We can get a lot of different kinds here and my father always has a few kinds as he loves spice food and even now I have one or two kinds in my kitchen.

To be honest, we also have no idea what that red sauce in the nasi goreng as well! HAHAHA well they said it’s chili sauce but it’s just weirdly sweet 😂
tiong bahru market is situated at tiong bahru where there are more elderly populated at, therefore the food there are generally healthier and not too heavy so to accommodate to their diet.
The white stuff in the dessert is call atap seed. They cook it and stored in sugar syrup! The coloured syrups if im not mistaken are supposed to be strawberry (red), melon (green) and brown sugar (brown/black) flavoured. A little like kakigori syrup but rumor has it that ours is just sugar syrups with colourings and we just associate these flavours based on colour theory 😂
The red sauce on the fried rice is actually a tomato ketchup.
Yes, the red sauce in the Nasi Goreng is (supposed to be) ketchup. But it's really REALLY BUDGET tomato ketchup. So... it's MOSTLY colouring, sugar, and some hint of tomato. The version you have is at least the right colour. I've seen 'red sauce' that is even pink, or with a tinge of purple. And yeah, it's a miracle if you can taste ketchup. :-)

Hawker centres in Singapore mostly open till lunch or sold out. Only a handful of them sell for dinner time or night time. Don't be mistaken for the dark colour in our dishes here in the Chinese dishes in Singapore or Malaysia. In some dishes we do like them with lots of dark soy sauce, it adds the intense dark colour look but it isn't salty like the light soy sauce.
That economical bee hoon is my favourite since childhood. It just feels so comforting and simple. Fun fact, they have been around for many many years. My grandfather often eats their food too when I was a kid.

Was not expecting you to dig out corn and beans.😲 And that Kampua noodles looked amazing. I love fried wontons! When I was a kid there was a great Chinese restaurant we used to go to and they got me hooked on fried wontons. Now I can't find them around here anywhere. The one Chinese restaurant that had them closed down a couple of years ago.😭

Amoy Street Food Centre caters to the office crowd and is mostly busy during lunch on weekdays. Tiong Bahru Food Centre caters to the breakfast and lunch crowd and is mostly empty at night 😂
The oval translucent jelly in ice kacang is actually attap seed made from nipah palm. The green worm is green rice flour jelly.
Nov to Feb are the cooler months in Singapore 😊😁😁

Quality Dark Thick Soya Sauce is not salty but a little sweet. It just made your noodles & stew pork knuckles dark & flavorful. The lighter less-viscous soya sauce is salty. There’s also fish sauce and sweet dark sauce which are used for the fried char kueh Teow. :)
There are lots of delicious hawker food that are $5 and less i.e., curry puff, oyster omelette, peanut pancake, curry laksa, roti prata, etc. If you're still in Singapore, maybe do a part 2? Could the red sauce be a sweet chili sauce? It's their ketchup in Singapore/Malaysia called "chili sos".
Compared to the basic standards and portions we had even up to yr 2000, many are crap.
Such a shame that you went to Tiong Bahru market in the evening! It is best visited in the morning-lunch hour. I really love the curry rice, roast meat stall, Hokkien mee, and porridge there.
I would live in the food centers. I could eat noodles for every meal. Great video!

Economic beehoon stall, you can request to mix noodles types too. Kway tiao + noodle, noodle + beehoon, etc

The places you visited are considered town/business area. Anything below $5 is condidered a pretty good deal.
Try visiting to whampoa food market . Their nasi padang stall that sells sotong(squid roe) is delicious too. Or visit the beancurd dessert stall too and Chinese rojak
Tiong bahru market you should visit in the morning till early afternoon 👍

Nasi goreng ikan bilis is also known as nasi goreng kampung (meaning village style fried rice). The main ingredients of that fried rice are ikan bilis (anchovies) and bird eye chilli (cili padi).
Never apologize for pigging out on noodles especially if you're literally surrounded by cheap, delicious noodle joints!
Hey, next time when you are heading to Tiong Bahru market, do so in the morning. Most of the stalls are open in the morning and they usually serve breakfast/lunch crowd.

Tiong baru is a morning - lunch time hawker centre, should be that the stalls are close, if you are there at 5pm
Another reason should be Monday, typically a lot of stores do no open for monday / tuesday as it is their rest day. As they work through the weekend.
Fyi Amoy Street food centre is smack in the Shenton Way Office area n it’s catered for the office workers during the work week. That’s why most stalls are closed on the weekends.

We loved Singapore, hotel prices are outrageous but food is such a bargain. Hawker centers are awesome wish every Southeast Asia country had something like them.
They do, they’re just out along the streets. These food used to be on Singapore’s streets as well before the government consolidated them under one roof.

If you're still in Singapore. Pls try the dumpling noodle opposite xinmin primary school. They are scaling down their business already. I'm afraid they will close down soon once all their kids graduated. You can only find them before 2pm. Block 631.
PS: i always get the tomato sauce noodles... Idk how but it's just different. You cant replicate it with off the shelf ketchup sauce.

That's why me and hubby have decided to retire in Indonesia as living costs, esp food price, in SE Asian countries are outrageously cheap vs. outrageously expensive in USA so we are not forced to keep on working until we die if we keep on living in the USA 😉
Every real Tiong Bahru resident who lived there up to late 90s has given up on the hawker centre and marketplace. Please, a small plate of mixed roast meat rice costs already $6.50/- right this afternoon and it tasted like it came from some small forgotten town in Malaysia.
5pm in the Tiong Bahru Food Market is not early. U should go in the morning, u will hardly find a seat.

One thing to try to avoid in a hot climate is consuming a lot of sugar. It metabolizes quickly, producing heat and it requires extra water to process. There is sugar in some of the foods and sauces already, so I would stick with drinking water or unsweetened iced tea. I think that would make you feel cooler. Other carbohydrates also make people feel warmer although it would be hard to resist the noodles and rice.

That red sauce you were showing us looks like cherry sauce to me. I live in Canada and this sauce usually goes with chicken Soo Guy (breaded chicken). It mainly tastes like a sweet sauce with a hint of artificial cherry flavor.
