In the light novel, when Ainz ordered Albedo to bring them to Neuronist, one the nobles said "but.. our families" with a quiet voice. Ainz heard this and immediatly ordered Albedo to also locate their families and send with them to Neuronist. Too bad they didn't animate this, but Ainz anger is still scary and well made

Honestly it’s what they should have expected. They pledged loyalty after showing themselves to be traitors who only care about themselves. Who knew this guy would be such a good character. It's easy to write him off at first because of his pudgy appearance, characters portrayed like that are usually conceited and don't have much to back up their big talk. But as a foil to that, he was actually an honorable and thoughtful person who knew and respected his station in life, and the responsibility he was born with. He was willing to die for it, and in the end he did. He truly was more than they deserved

ITs this scene that showcased that ainz had legitimate reservations about showcasing a massive slaughter, he would have probably thought that killing off the majority of them would have been enough of a whip or a message, but this action by the nobles. It angered him. Zanac was legitimately their only way forward at a chance of some form of survival. The very reason ainz may have spared 10% of them. He's done with that reservation. For people who have watched or read the novel "Romance of the Three Kingdoms", this scene of Ainz's anger is very cliché and well-crafted at the same time to potray Ainz's thought and psychological state.
In Ainz's mind, he put the Prince at the same level as him. Both men are human at heart with ambition, responsibilties and self-righteousness. It is only happened that Ainz has the upperhand. Thus, Ainz wants to demonstrate his determination through a full-out war, and grants a quick-death to the Prince as last parting gift. This reminisces Cao Cao's phylosophy in dealing with respectful well-worth enemies. Basically, all men must prove their ambitions in life by crushing others' determination through sheer force and having greatest determination.
The foolish nobles in desperation for their lives have robbed Ainz's rare moments of joice. Hence, it triggers his wrath and sudden abandonment of the campaign.

It's also pretty reminiscent of Caesar when he was presented with the head of his rival Pompey by the boy pharoah of Egypt, Ptolemy the 14th. It was supposed to be a pledge of allegiance to Caesar, but Caesar refused it out of anger, having had respect of Pompey only to see him be disrepected and his body disfigured by this boy pharaoh.
Later after getting more power in Rome, Caesar joined an alliance with Cleopatra, Ptolemy's older sister, and dethroned him for her. She then had her brother killed for exiling her and "supposedly" had Caesar's bastard child.

During their short talk together it was apparent in both sides that they both developed a mutual sense of respect and admiration for each other due to both desiring the best for their respective kingdoms. Zanac himself had unknowingly appealed to Ainz’s humanity during their conversation, having unknowlingly caused the enemy monarch to seriously reconsider and accept the Kingdom’s surrender and put an end to his invasion.
Later after the Prince’s death and his severed head brought to Ainz as a”peace offering” by traitorous nobles of the Kindgom, Ainz showed obvious fury, anger, and hatred for the traitorous noblemen who killed and beheaded Zanac to save their own skins and ordered his servants to collect the rest of Zanac's body and give him a proper burial despite his usual usage of corpses to make undead, showing an obvious sense of respect for the prince. Ainz then proceeded to order Zanac's murderers (and their families) to be continuously and viciously tortured by Neuronist Painkill for their crime of betraying their prince, before ordering his army to completely annihilate the Kingdom's Capital and its people without mercy. This in turn further revealed that whatever guilt, mercy or pity he felt for the Re-Estize Kingdom was finally swept away with Zanac's death due to now seeing that there was no decency left in the kingdom.
