    Once rolled out put in the freezer for a bit before you cut. It makes it much easier to cut without sticking too much

    So I just used the dough in my dash mini waffle iron...used parmesan on bottom and top, flattened the dough..OH MY WORD!!! Half the work and WAY crispier!!

    I've made the Keto Focus version with the Mashed Potato Extract. The extract makes all the difference in the world. It takes Heavenly Fan's recipe to a whole other level.

      @@angelinaferriola3212 Have faith. The Keto Focus recommended extract tastes wonderful. Next time I make them I'm going to try adding an extra 5 drops to bump up the flavor.

    I made the recipe with 1/2 coconut flour and half almond flour, and scaled the water accordingly, lots of salt and a bit of all purpose seasoning ... the best I've made. And a good sub for real potato fries :)

    I’ve made these and I agree they are fantastic. I know EVERYONE had their OWN lil tweak to these but here’s my two cents worth. I heard McDonald’s uses beef tallow to fry their fries so I replaced one of the tablespoons of water with a tablespoon of BEEF BROTH. I think it REALLY makes them taste more like fries. I do prefer the coconut flour ones but after experimenting A LOT you have to cut the coconut ones thinner. I’m soooo glad you tried these! I make a BIG batch and freeze them, that way I can have ready to go fries whenever I want! You can also make AWESOME crackers with this recipe! These make the lowest carb & best crackers I’ve tried. I add a lil ranch or everything but bagel seasoning.

    Wes, I thought of you the other day while making a keto chocolate cake. I was getting tired of sifting all the dry ingredients with my fingers through the mesh, when I hit upon a brilliant idea. I started using the wire whisk instead of my fingers. It works great and soooo fast! You will love it.

    I make these and place the dough into a ziploc baggie, then roll it. The bag forces the dough into a perfect square. I also toss the dough into the freezer for about 10 minutes to firm up the dough, then I slice them thin. Works like a charm.

    I made the Heavenly Fan coconut flour fries tonight with the suggested addition of 1/3 cup fresh finely grated parmesan courtesy of Mayra of Keto Love. Then fried them crisply and they were as close to regular fries as we could imagine. I'll try the almond flour version next. Try the coconut version again with a little salt and parmesan and see how you like it.

    Wes, when rolling out something like this, try folding up the parchment into a rectangle around the dough, and roll it in that, you'll get that perfect rectangle every time with no fuss. Just make sure to cut 1 large sheet of parchment so it can double over itself around the dough.

    Since they’re sticky prior to cooking, I wonder about making “seasoned fries” and rolling them in a seasoned crumb mixture (pork rinds/nutritional yeast/ and “shaky cheese” aka green can parmesan, plus some herbs/spices) before cooking. Yum. When I used to make traditional fried chicken I always fried extra clumps of seasoned flour because that was my favorite part. Lol

    I tried the almond ones this afternoon. Didn’t care for them as potatoes but they make good bread sticks. Hubby loves French fries; when he saw them he was fooled, till he tasted them. Oh well I always have to try something new anyway.

    Made these today w coconut flour. I added salt and a tbsp nutritional yeast...they are really good! I didn't roll out the dough quite enough and didn't realize they puff up a bit, but great alternative to fries and alot easier than cutting a rock hard avocado for avo fries! Thanks!

    Just made these! Added salt and onion powder to the dough and fried with lard...and they are good! I think i put a little too much onion powder to them ..they taste a lot like hush puppies! Still good as far as I'm concerned. Even put a small dab of beef broth base in the water...this really turned out some flavor.

    I've made these a couple of times now. This time I did a mix of the almond and coconut flour. Added a little salt and 1 T parm cheese; then cooked in coconut oil. Pretty good 😋👍

    I sprinkle some almond flour on the rolling pin and dough and it rolls effortlessly. No sticking. I also don't add as much water as you did. I think that added to the stickiness. These are great! 👍😊

    I'm waiting for my coconut flour to arrive from Amazon so I can try these....😁....I can't remember where I saw it but you can also add mashed potato flavoring to the dough and it makes it taste even better. The company for the extract is called One On One Flavors. I simply MUST try it!

    So glad you posted this..was looking forward to see your reaction to the taste test 😁
    I made the version using almond flour and they were “heavenly”. I don’t own a rolling pin (lol) so I hand pressed the dough and perhaps it wasn’t as thin as her recipe called for, and used the fine ground almond flour. I found that they tasted more potato-ey, like a slightly thicker traditional fry and not overly crunchy. Still tasted fabulous with sugar-free ketchup and Cajun seasoning...
    I saw someone post that instead of cutting them into “fries” that they added some garlic powder and Italian seasoning and left it rectangle for a “garlic bread”. I want to try this!

      Yes. I've made them. Yummm! As long as you haven't added garlic powder or something, just shake them up in a bag with cinnamon and erythritol. (I've made them the same size as the fries, and larger, but if they are too big they will not get done inside.)

    I been telling ppl the almond flour version is so much better. And dipped in "ketchup and mayo" it taste just like a real fry. ESPECIALLY cooked in peanut oil

      Cooking them in beef tallow makes them taste like the Mcdonalds fries from back in the day. So good!

    Happy to see you make this video Wes. I have watched both Heavenly Fan and Keto Focus' video. I was intrigued by Keto Focus' suggestion of potato extract (which I didn't even know was a thing). But my first thought was making up a batch of french fry seasoning to add to the dough. I used to enjoy (potato) seasoned fries way back in my preketo days 😋

    I've always used chopsticks when frying. Learned from my Japanese Mom. I developed a tree nut allergy this year and ordered sunflower flour/meal. I think I'll try this using that. Would you consider making a video using almond flour vs sunflower flour/meal in baking? Wishing you and yours a Happy New Year!

    Made these Heavenly Fan ones with coconut flour but added also salt in the mixture for flavor and I also added Keto Focus suggestion of mashed potato extract (this flavoring smells funky AF but is amazing also in mashed cauliflower). Made a double batch weeks ago, ate the first batch with keto fried catfish and fried shrimp and froze the second batch and just cooked them from the freezer last night to go with big fat bacon cheese burgers. We love them!

      The Amoretti has a fresh sweet corn flavor (think fresh creamed corn) and the OOO Cornbread flavor is more liked baked cornbread. I like both, but use the cornbread flavor more often. (Plus, lots cheaper as you said!)

    OMG will never have veggie fries again. I went on her website and praised her for bringing this recipe to our tables! And kudos to you for supporting her! I made the almond flour and they were the perfect addition to my veggie burger for lunch! Having slipped from LC over the holidays, this seemed to get me back where I need to be. All that crap I ate from T-day to Christmas gave me the worst heartburn I've experienced in years!! Keep the videos coming!!! Need the battles in our kitchens, not elsewhere!

    I add salt, garlic, a little cayenne and parmesan cheese to the recipe. I sprinkle some parm. cheese on the cutting board to roll the fries out on. They come out tasting like seasoned french fries, soooo much better than the straight recipe. I prefer the coconut flour recipe. These are a game changer!

    Ive just made these, i made half the dough in to fries as is, the other half i mashed up some steamed celeriac (celery root) and steamed swede (rutabega) and mashed them both in to the dough, and then rolled and cut it in to thicker fries, like british chips/steak cut fries. They tasted very much like the real thing.

    How crazy is it that today for lunch (I live in France so it was 10 hours ago) I wanted to make them (I've already have, both versions) and looked at your channel to see if you did make them at some point, I don't know why, just to have your opinion! And 8 hours later you uploaded your video! That's really insane xD I prefer also the almond ones because I could feel too much the coconut flavor, even with seasoning. So today I tried mozza sticks and I failed miserably, maybe one day you can do a video on keto mozza sticks? Anyway, for the fries, I'll do a combination of both next time! Love your videos!

    I've done these a buncha times and they are really good, definitely the best keto french fry out there. A variation with the dough I've done a few times was use half almond half lupin flour and added a bit of baking powder to the dough. rolled it into about a half inch thick log and cut them up like gnocchi. used a fork to make the grooves in them then boiled them. that was actually really good too.

    Have you tried Lupin Flour?
    "Tim Talks Cooking"made these & substituted Lupin Flour. I have yet to try this recipe, but l love Lupin Flour for coating fried chicken. I have not experimented much with it for other uses, but as part of a dredge for fried food, I've made it to the Promised Land.

    Okay, I made these. First time as written, the were okay but not the full flavor profile I wanted. I made them a second time as a slightly larger batch (67g coconut flour, 4 tsp Xanthan gum, 3/4 c ground fresh parmesan, 10 tbsp hot water) and to that I added 1/2 tsp Knorr beef bouillon powder, 2 tbsp beef tallow, 1/4 tsp erythritol, and 20 drops of mashed potato extract in the water before adding. I did it all in the food processor then let it rest in a zipper bag as instructed. When I cut them, i tried to make them smaller so they were easier to handle and used 2 sets of tongs to work with them in the oil (combo of avocado and beef tallow) because they're really sticky until set. O...M...G... French Fries are back on the menu!!!

    I find a good mix by adding one Tbsp of ccnut flour to the almond flour mix. Also, if you fold in the sides of a piece of parchment to cover the dough, you can roll a rectangle really easily. It helps to use the parchment on a roll and cut your own size. Also, Parmesean cheese (1Tbsp) adds a nice flavor and crispiness. Adjust water as needed. Love your vids!

    I have found that if you just use the back of a spoon to spread the dough out to make a rectangle, it works much better. And sometimes I even wet the spoon in that hot water that I had on hand. Works beautifully!
