During the canning process of meats, it will essentially create a broth from teh meat. When the can cools down to room temperature the fat and broth will separate. Since the meat is cooked in the can, the natural water from the juices in the meat does not evaporate as it does when you cook meat on the stove or in the oven.

I live in northern Indiana in an Amish community. Our rural grocery stores always have canned meats from Grabill Country Meats Co. I've been using canned meats for over 30 years. I keep some in my food storage for quick meal prep.

Keystone Beef is awesome. Dump the entire contents (juice & fat included) into a saucepan. Simmer until all the juices are reabsorbed back into the meat, then use. The ground beef has a different texture than cooked fresh ground beef. We had a flood Aug. 23rd. I lost about $2,000 in Keystone and Graybill meat. My nephew makes bbq pork sandwiches with the pork. I've only had beef, chicken, and turkey. I live in Ohio, and it's more cost effective to buy from Walmart than directly from Keystone. The ingredient list sold me - beef, salt - nothing else.

    • @bite-sizedshorts9635

Did the flood wash the canned meat away entirely, or did the cans just get wet? If they were just wet, I'd dry them off and eat them anyway. If the labels are gone, then you just have a surprise with each can.

The Keystone beef is great for 1-2 people, when you don't want to cook a whole beef roast. Hot beef sandwiches with mashed potatoes and gravy. Burritos. Beef and noodles. There are endless ways to use it.
The ingredients are beef and sea salt. Honestly, it would probably be difficult to find anything healthier and safer. Sometimes, I've wondered about some of the fresh meat I've seen at grocery stores,

I've never eaten commercial canned meat, except tuna and salmon, but I can beef and chicken often. There is always juice that is released from the meat during the high heat (240 degrees) processing. If the meat is fairly lean you don't get so much fat. It's not like fresh, but definitely good enough for a quick meal. No defrosting, no simmering.

On the ground beef drain the meat juice before putting in skillet with the hard fat and you’ll not find it mushy …. Also the canning process itself cooks the meats so the water in the cans is actual the meat;s own juices … you can freeze juices for cooking too …

Since these cans are saying no water added, I'm going to assume they canned the meat similar to when I can meat in mason jars at home. When I can meat I put the meat in raw, I will typically throw a little salt in there and then put them in the pressure canner. When I pull the jars out they are filled with the juices and what fat was in the meat. It's almost like magic when you haven't ever seen it done before, in fact, you might want to try it sometime. I was canning my own chicken when I was buying it in bulk and then I can the venison shanks since they are so sinewy and have all that connective tissue that canned in a pressure canner the meat just falls apart and makes for some great meat for chili and such. Growing up my mom would can chunks of beef and then for a quick dinner (totally not keto) she would put it in a pan to heat up, make the broth/juices into gravy and then would have mashed potatoes and another vegetable and dinner was served. I even remember a few times it was the canned meat and gravy and bread. Ya gotta do what ya gotta do and my mom was great at stretching the dollar but every so often meals were a little on the "lean" side so to speak. Anyway, I'm only a few minutes into the video so I'm going to watch the rest.

Added my own pepper mixes - seasonings- onions etc- it was very easy and quick in the long run- AND bottom line it was serve worthy to my former son in law who being of Mexican descent taught me to make the dish in the first place.... this one is for you Mario!

Steve, I was chuckling at your title. I was wondering if you had found some canned possum. Yes, it is out there. But Keystone does have good canned meats and it is great for when you have a snow storm and there is no electricity to cook food. Warm it up near a fireplace in a cast iron skillet and you are good to go.

I can meats sometimes and I’ve never had an issue with them. Hamburger always gets mushy in the canning process. I’ve never heard of a way to get around that but it works in a lot of recipes!! Great video! Those enchiladas were huge! L😂L almost more a footilada! I’m definitely gonna try that one!!

The ground beef wasn't exactly "mushy", but like I said, very reminiscent of Taco Bell meat (though I'm sure without nearly the amount of odd ingredients).

20+ years ago, before we gave up bread, our favorite sandwich was Libby's beef, Kraft white American ("Swiss")cheese slices, tomato & miracle whip, on a large onion-cheese roll. That meat had a very pleasant beef flavor, very close to leftover chunks from stew. It is canned in wheat flour gravy, tho'.

Saw that brand at Walmart and bought a couple cans, even though I didn't need them. That's to encourage Walmart to stock more vendors that don't add sugar to their products. And, hey, it's canned meat. How cool is that? 😂
