- My youngest son was craving Kenyan cuisine and seemed to be missing some of our regular meals that we eat at home in Kenya.. so I decided to make a classic Kenyan meal for my family. My sister Mady helped me with the cooking and joined us for dinner too.
Ugali is made of corn flour and is a main staple in Kenya and across East Africa.
I had a lot of fun preparing it.

great job on the ugali and spinach ,,the beef stew is more for rice and chapati ...for ugali is usually dry/wet fry beef.but great cooking .
The kids will miss that part of their lives, but happy they are having this fun time with their grandparents and aunts and uncles. You did well with preparing the food for them. I have no idea what is right or wrong about the preparation but in my opinion it was well done. Thank for sharing your family with us. Love watching you guys always.

The stew you made is usually accompanied with rice, or chapati. Not ugali. For ugali you just cook the meat with onions, tomatoes, and then dania with other ingredients you may want to add.

For chapatis in the US find a local Indian /Pakistani grocery store and ask for frozen paratha. They sell those in precooked/ microwave ready form or already flattened raw dough form that you just plop on a hot pan with oil, flip a few times and voila!! fast chapatis.

There are no shops like that in St. George unfortunately. Although we do have Indian restaurants where there is naan.. that’s the closest thing. Haha

Actually, there are no specific measures for ugali and chapo, you just add the unga until you just know it's enough. Or the ancestors whisper to you that it's enough 😄😄

The main difference between the maize unga we have in Kenya vs the Masa that you get in Mexico is that to make masa they add slaked lime to the maize flour to soften the corn. This is what gives corn tortillas and tamales their distictive taste.

Hi Makenze, next time buy Masarepa white corn meal flour (Goya Brand) from any Hispanic store. It is better and easier to prepare. Its ugali is like for Kenyan hostess flour.

You can buy frozen “Paratha” in a Mexican store. It’s a ready chapati, you only need to cook in pan and you’ll have made then chapos.

A little tip...I've found that most locally made seasonings are good for at least a year after the expiry dates because the ingredients were freshly sourced...I use Caribbean and other "exotic" seasonings all the time... never had a problem
