I've been smoking pork steaks the past few times instead of pulled pork and the family really likes it. I like the idea of searing them at the end to get the crunch in there. I'm going to have to try that. I just ordered your sauces and a few rubs. Can't wait to try them! Thanks for sharing!

Not the way I do shoulder chops, but the sear at the end is interesting. May have to give that a try.

We're primitive camping at Soap Lake, Washington state, and I have my small Weber grill, hickory chunks, and two huge bone in porkchops in the cooler. So I'm right behind ya.

Thank you so much for this great video! I am from St. louis and been eating these steaks all my life. They are more popular now in other states but years ago on vacation we couldn't find them in other places. My family loves the carmel and burn but doing this on a normal grill they are not very tender. This cut was inventid in St. lous in the mid 50's. I will try your method on the smoker and finish on the Weber. Thanks again.

I love pork steaks. I use a vinegar marinade to break them down. Then grill them to medium-rare similar to a ribeye.

It's just a Pork Butt Bone -in that has ben sliced by the butcher to about a 1 inch thickness. Very popular in st Louis Missouri.
