That food looks like a cafeteria type, but upper end, I live in VA and we have southern food places like this, it's not pure soul food like dirty south, but that pulled pork looked bad, all that fat, the kitchen should have given her better cuts knowing she was a journalist with camera crew. The reason she got all that food was to film it for us, not really eat it all, so I understand that this actually was beneficial to the restaurant or market. So you can't look at this as wasting food. You want to see that then go dumpster diving behind any supermarket, you will shed a tear at the things they toss, a good manager donates all that to a free soup kitchen or giveaway store for anyone to take.
Shady Maple looks so good, both when it comes to the food, the atmosphere and vibe of the restaurant and how friendly and welcoming the staff seem to be! I'd definitely go there at least once if visiting America again. One of very few restaurants in USA that I'd actually want go visit (or visit again, In-N-Out is on my list of places to revisit) But yeah, Shady Maple just looks awesome, and also seems to help the local community a lot as well by bringing in more people to the town (customers who go eat at Shady Maple and then may benefit other local busineses as well before going home again, I've heard Shady Maple also source their food locally which in turn supports local farmers, and not to mention how many work at Shady Maple and earn a living from having that huge buffet in their area. It feels like an establishment that is very important for locals and visitors alike. May their sucess be long and prosper!

And, to say that a gas oven cannot reach the temperature of a coal fired one is rediculous. It will only be limited because of inadequate gas burners or gas flow. Obviously, when an oven is intended to only reach 550 degrees, rather than 700-900, it will have a lower maximum temperature. That is the only advantage to a coal or wood fired oven: If a higher temp is desired, just add extra fuel.

I had my aunt - who works for an American school kitchen watch this, and she said there is no comparison to Japan. We might as well be in a third world country as far as sanitation and nutrition standards. My children are grown, but if I had to do it all again, I would home school. And God Bless our military (what's REALLY left of it - idk if any of y'all noticed what i did).
In my area we farm, and trade, lots of farmers markets here, and you can buy your milk and eggs right at the farms, it's a trust system no checkouts or registers, just bowls, and boxes to throw money in. Never heard of anyone stealing around here, I'm lucky to have spent most of my life here
