You did a really good job with your research in terms of what food to try. I just noticed something you said about the moussaka, which is not true. It is not originally greek, but a greek chef invented a greek version back in 1920s, which includes eggplants and potatoes which are fried before baked and they use lamb mince,where we use only pork or pork&beef mixture. Every Balkan country does it in a different way. It is originally passed to us by the Ottomans, but it also exists in the arab cuisine and in Georgia and Armenia too, so who knows what is the true origin of the dish, however every country that makes it has adjusted it according to their taste :).
We love that, there's nothing better than cuisine changing and adapting to the local palate, it's interesting to see how it evolves. Thanks a lot for watching and commenting 😊

The tomatoes in Bulgaria are great depending on the season if you visit Bulgaria during the summer a good restaurant should use real earth grown tomatoes full of flavour and smell and same with the other veg but the tomatos in the supermarkets here are hydroponic grown and dont smell of anything and are modified to last long before they rot . So beware you wont get real veg from supermarkets here its from abroad . There are growers in southern Bulgaria which grow produce in earth which sell their produce at local street markets and local shops they have the best . Many british have never smelt what a tomatoes should smell like or tasted a earth grown one .
I forgot tarator and all dishes like moussaka is great. Try roll Stephany with puree of potatoes and sour marinated cucumbers. Come to Shiroka Laka and Gela, its amazing villages with music festivals.

Not the way to drink rakia. You got the small sips right, but immediately after every sip you must have some appetizer. Shopska salad works great, but there are tons of good meze(appetizers complimentary to alcoholic beverage) cabage with chicken and mayonnaise, white cheese with paprika and oil, baked eggplant with garlic etc.
Burek is turkish, but banitza is bulgarian! Its different. In burek have baked peeled peppers and cheese or patlidjan or meat, in our banitza have cheese or vegetables and spinach. Its not same. Actually our bulvarian delights-locum is WAY YEARS MORE DELICIOUS. TIRKIAH NOTBHAVE FLAVOR, ITS SO DRY AND WE PREFER OUR LOKUM WIRH ROSES, WITH AROMAT OF MILK WITH WALNUTS AND WE LOVE OUR!!!!
Traditional mousaka have potatoes on cubes. We in home make double biggest.put carrot and spices Lil black pepper, chubritsa. And there have minced meat. From what e make meatball. We put lot onion. On top have flour eggs. Milk and we bake on top 20 minutes to golden!

We not have tribe soup! We are not tribe we are old nation!!!! Stop humulate us. We have best alcohol and dishes from what we produce. Cheese, kashkaval, yoghurt, butter, cows, lambs and what we need. I will be happy if they go to Hungaru and eat soups with sugar. Its super strange. Try filled young lamb with rice. Rodopean recipes are kachamak, all kind of klins, and soups. Try shkembe. I don't know what is stis in fought but is not traditional its something modern.

But sure she is pretty and cheerful, making me smile. Bulgarian Moussaka... It reminds me more of English Shepherds pie. Hang-over tripe soup (Is it an universal thing? I know other countries also have such things) and garlic in vinegar... Bulgarian version of it, I must try!

Try Snejianka, russian salad who e love and try all salads. Banking starec is not sossage. Its special only for Bulgaria and its full of meat and blood of the animal. Its like lukanka. Like pepperoni is not sassauge.
Banitza is for breakfast. With boza or ayran. In small cities you can eat for 4-5 leva. I not love Sofia. Try visit Orlovo oko. Yagodina cave. Smolyan's waterfalls canyon, Pamporovo ski courort. Try kremka and other delicious thinks. Try pumpkin rodopian banitza. Banitza with spinach and green leave veggies, babysitting with rice and cheese and eggs. Bulgarian salads and some dishes is near to greek and turkish recipes. I cant tell who area from who but have small differents. Try bulgarian traditional salad of shepherd..
The salads in the restaurants are made using tomatoes from the stores and the taste is not the real deal. You must taste proper homegrown tomatoes during the summer season. The store ones are focused on long shelf life and they are not the variety that Bulgaria was famous for. They are not bad but they are far from the truth. We are eating the moussaka topped with a lot of plain yogurt.
Its not parsley, its dill. We put cut on cubes cucumber. Put oil and garlic paste and salt. When cocumber make her juicy we mixed milk on finest juice. Then put. Tarator without garlic or dill is Lil politician without shoes.
The name sevar is not very popular now ,but it is very interesting,that was the name of one of bulgaria khans from the pagan times of bulgaria before 863 a.d. when we became christians....if you dont know the ancient bulgars organise a coordinated defence of half of europe to guard its doors from the arabs,one part came here and defeated the arabs at the bosphorus dirung the rule of our khan tervel,his uncle khan alcek went to central italy (with 10 000 heavy calvary,very big force for the time)and organise the locals to fight the arabs cause the roman military traditions went extinct,also the bulgars of khan kuber arround the same time were populating macedonia and northern greece in case arabs try to come from this way.....khan tervel(known in the west as tribelius)was proclaimed saint by the pope and was givven the title caesar by the byzantene emperor being the only foreigner to recive one,this things are not very popular ,cause we are small country,i guess you didnt knew that the first computer was invented by the bulgarian john atanasov,also the ancient bulg.calendar is declared the most accurate by unesco and we saved all our 50 000 jews from the holocost being the only state to do it,only denmark let their 5000 escape to sweden

That's a typical food from the Balkans, heavily influenced by the Ottoman Empire era I find it amusing when Albanians (where I come from originally), Greeks, Turks, and Bulgarians fight over certain food items and dishes such as feta cheese, byrek, Moussaka, Baklava, pastiçio, tarator/yogurt soup, etc We all have our local updated version of things In Albania the main popular drink is a traditional Raki made from 🍇 grapes. Bulgarians use plums. Turkish Raki is more of Greek Ouzo style and so on We are suckers for coffee both the espresso version as the thick one some call Turkish coffee and others call Greek 😅🤣😂 Our feta like cheese is much creamier and tastier than the Greek one, while Bulgarian version is much harder and saltier Each countries have phenomenal cuisine and Albanians and Greeks use much more fish 🐟 and vegetables in dishes

We make grape, peach, sourcherry, apple, plum and many kinds fruit rakia. My dad make from rosehip and from berries. Shkembe is made from stomach and intestines of young cow. First they boil shkembe. After boiled they peeled strange membrane of lumen of stomach then cut on many little parts. Garlick and vinegar is best for that who need something. Bcoz this stomach smell still on animal. So we put all garlick and vinegar. And eat. Women's and kids hate this.

actually in all recipes, main sause is bechamel mixed with all potatoes. Then eggs with milk with flour and salt. Put on 200° 20 min for gold color!

The salads in the restaurants are made using tomatoes from the stores and the taste is not the real deal. You must taste proper homegrown tomatoes during the summer season. The store ones are focused on long shelf life and they are not the variety that Bulgaria was famous for. They are not bad but they are far from the truth. We are eating the moussaka topped with a lot of plain yogurt.

Its not parsley, its dill. We put cut on cubes cucumber. Put oil and garlic paste and salt. When cocumber make her juicy we mixed milk on finest juice. Then put. Tarator without garlic or dill is Lil politician without shoes.

I find it amusing when Albanians (where I come from originally), Greeks, Turks, and Bulgarians fight over certain food items and dishes such as feta cheese, byrek, Moussaka, Baklava, pastiçio, tarator/yogurt soup, etc
We all have our local updated version of things
In Albania the main popular drink is a traditional Raki made from 🍇 grapes. Bulgarians use plums. Turkish Raki is more of Greek Ouzo style and so on
We are suckers for coffee both the espresso version as the thick one some call Turkish coffee and others call Greek 😅🤣😂
Our feta like cheese is much creamier and tastier than the Greek one, while Bulgarian version is much harder and saltier
Each countries have phenomenal cuisine and Albanians and Greeks use much more fish 🐟 and vegetables in dishes

We make grape, peach, sourcherry, apple, plum and many kinds fruit rakia. My dad make from rosehip and from berries. Shkembe is made from stomach and intestines of young cow. First they boil shkembe. After boiled they peeled strange membrane of lumen of stomach then cut on many little parts. Garlick and vinegar is best for that who need something. Bcoz this stomach smell still on animal. So we put all garlick and vinegar. And eat. Women's and kids hate this.
The homemade rakija sounds very good, we've heard many people make it at home.
