Hi, for all my recipes, I use 35% heavy whipping cream, as you need the high fat content. If you want to whip the 22%, try chilling the cream, bowl, and beaters in the freezer for a 10-15 minutes or so. Let me know if this works! I'm curious as I've never used 22% cream :)
Hi! The key is to make sure you also have the sugar in and the heat is low. Make sure you are not putting the bowl directly onto the heat source - have a pan under with water and put the egg bowl in the water. Hoping this helps :)
You can add the vanilla essence in the whipping cream if you like :) I haven't found much difference in taste when I've added so I left it out to make things simple!

It wont work you need cream
It won't work coz after beating for a while, I needs to form a stiff like foam, and just milk won't do that.

This is an easy recipe. But can we eat the egg whites raw? I noticed that only the egg yellows were cooked.
Hi Elizabeth, yes this recipe is very easy with delicious results! Only egg yolks are used in this recipe. I usually make an omelette with them :)
