    Thank you so much, I’ve struggled all my life to get my curry correct. What made it better is u added the measurements. My mom is in Guyana and I’m abroad every time I call to ask her how to cook something she tells me to average the ingredients 🤦🏻‍♀️😂

    You are the first chef I see used broad leaf thyme in cooking, I planted one in the 80's in Barbados and to this day my family still picking leaves from this plant to cook.

    Am Pakistani living in NYC Queens i eat alot. Guyanese styal food i like how ur curry is abit different then india and Pakistan styal. U guys make it Green Chicken curry. We make it Red or Orange color Chicken Curry

      I have tried both the India and Pakistani curries and they are both very good. I love the chapatis💔 as well, it's like our Sada roti .💔

      Guyanese masala is different also they hardly use any haldi, red chilli powder or garlic paste. Curry looks good. I think the heat was too high causing the madala to burn

      I think what happened is that when our ancestors came from India from 1838 they were cooking like back home (India) which was most natural but as time progresses the living conditions were soon to turn hard and rough and so a unique style had to emerge partly because the ingredients weren't that readily available as the colonial masters might have limited the importation of those condiments that goes into making the massala or it became too expensive. So, they had to make do with whatever was available and hence, our version of the curry as you said came out "green"...it's unique to Guyanese Indians and by extension to all Guyanese and by the way we even call it 'chicken curry' which the Trinis for the most part seem to have a problem with us, saying 'curried chicken' - which is correct too but like I would maintain 'chicken curry' is a Guyana's brand!
      Thanks to our brother and family from *Real Nice Guyana* to have taken the time and initiative to highlight our unique cusine culture to the world...after all the proof of the pudding is in the eating...as my late English language teacher- Mr Rohan Chandisingh used to say. Cheers all .

      At the start of this video we showed how we chop the whole chicken. If you want to use only drumsticks, then the amount should be about the same as the whole chicken weight which is about 3 - 4 lbs.

      We do not make any of the spices, We use Indi brand Curry Powder, Chief brand for the roasted ground geera ( Cumin ) and Garam Massala
      The three is mixed along with the blended garlic and pepper with some water to make the Curry paste.

      😊 Yes the curry paste has to be cooked for about 2 minutes before you can add any ingredients to it.

    You recommended the indi brand for curry. What about masala? I just bought indi as a back up. Have you tried it? How is it?

      We use Chief brand of Masala , we have never tried Indi masala. If you try it maybe you can let us know .

      @@RealNiceGuyana i just opened it. it smells nice. I guess it’s all mostly the same at the end of the day. I’ve heard of chief too. I just figured maybe the Guyanese brand would’ve been better being that I like Guyanese curry better

      Well smelling nice is a good starter 😀. Yes I know they can be expensive. So how did it taste ?
      When you try the Chief, it would be great to have a comparison from you.👍

      You would normally blend it with the garlic.

    I cooked chicken curry today. Almost exactly as Sis. Molly. My wife was the taste tester. Her "constructive criticism" (her words ..lol) was that my hand was a tad heavy with the Lalas curry powder and i should have bounjayed the chicken a little longer. No rice. Dal, chicken curry and roti. It taste just fine, but, still learning and getting better. BTW, I bounjay my dal. love RNG 😁

      Great, you're on your way to being a chef😃 I know what you saying "constructive criticism " usually comes as a disguise 😀I find Lalas Curry powder a bit too strong for my liking. You have to bounjay until it is as dry as possible without burning ( catching to the bottom of the pot , as we say ) and that truly makes the curry taste better
      so I have to take your wife's side on this one, sorry
      That would maybe explain Lalas being stronger than the other curry powders.
      I find Indi curry to be the best from all that I tried
      Hey Bhounjal dhal is the best. Good food.

      That's just blended garlic, they turn green sometimes due to a chemical reaction when kept in the fridge, safe to consume. We are using fresh garlic now to avoid that.

      We do not make any of the spices, the following are the brands we use
      *For Curry Powder we use Indi brand
      *For Garam Masala ------ Chief brand
      *For Roasted Ground Geera which is Cumin--------- Chief brand
      We do not add anything to the garlic, the green color in some of our earlier videos happened because we blended and kept it in the fridge, the color changes sometimes when you do so.
