And when I add the chicken in with the spices I let it release and burn off it's natural juices before adding water, which is essentially the "rank water". And yes some people put the tomato paste, it's pretty good with it as well.

No. I do have some other curry recipes on my channel with the green seasoning. A good curry with fresh and simple ingredients always speaks for itself and so there isn't always a need for the green seasoning

That is right. In Guyana they would usually half fry the chicken or steam it. But that is because it is fresh chicken/hard fowl, so it needs to fry/steam to get some of the rankness out. With the American chicken from the supermarket, it doesn't need to be steamed because the texture is different.

This isn’t Guyanese Indian food. It’s Indian food. The recipe is the same. Why do Indians born generations outside of India think the recipe is differently from India? Take pride that after the British used Indians as indentured labourers hundreds of years ago, the offsprings still held on to their culture instead of pretending to be different.
Many Indians in India 🇮🇳 don't recognize us as Indians. Many Indians don't even know about indured laborers. Indian is our ethnicity, and guyanese is our nationality, hence why we're called indo-guyanese. Who said we take many indo guyanese are proud Indians even if indian themselves don't regonislze us.

Its weird how Indians even in Guyana sometimes cook food differently. That's a lot of masala when you add it up. That would give me a serious heart burn .I though curry was just curry powder and a bit of masala if you want. I also don't know any other people family or otherwise who add extra geera on the side besides what already in the masala. ...is this some sort of regional thing?
Yep everyone has their own way of making these dishes. You can definitely make it lighter (especially if it gives you heart burn). I like it dark though. The curry does need the masala for the color.

Curry should never be yellow. You have to put a good ratio of masala to curry powder and bunjay (brown) the chicken really well.
It can be yellow if you want, so I like it yellow, and I add a bit of turmeric powder so everyone cooks different

You can season the chicken with some black pepper and green seasoning, but it is really not necessary.
Looks good, but not all guyanese follow this recipe and cook it this way. I add Maggie to it. Its different for everyone 😊 ( I'm guyanese)
