Warm Potato Salad with Jacques Pépin | At Home With Us

  • Our friend, Jacques Pépin is in his home kitchen showing us how to prepare a potato warm potato salad that you need to try. This recipe will make extra "mayo-grette" (a bit of mayonnaise and a bit of vinaigrette) to keep in your fridge.
    INGREDIENTS
    1 pound potatoes
    2 tablespoon mayonnaise
    2 tablespoon mustard
    2 tablespoon water
    Salt & pepper to taste
    1/4 cup olive oil
    Scallions
    Parsley (or any herb you like)

    I love that he’s so accomplished, but still cuts the potatoes mom-style in his hand directly into the bowl. Love seeing these glimpses of Jacque as a home cook!

      Same here - 55! I’ll add one and say I also remember watching Julia on WGBH after Mr. Rogers. In the days before PBS advertised other shows they played Take 5 by Dave Brubeck between broadcasts. Not a bad way for the under 5 set to pass an afternoon: puppets, French cooking and jazz. 2/3 of that is exactly the same today! ♥️

    I love these videos .
    He is simply showing you how to prepare a dish.
    There's no time limit, no one screaming at you, no, you only have three ingredients to prepare a six course meal B.S.
    So many of the so called "cooking " shows now are such a joke.

      I agree, these vids are relaxing. Yeah, those competition cooking shows all suck. With the exception of the original Iron Chef (Japanese version) I refuse to waste my time watching any of them.

      I am a huge Jacques Pepin fan. As soon as I discovered him I realized how useless the Gordon Ramsays of the world are. They don't show you how to cook but they only seem to want to impress you.
      Jacques never wants to impress, he just wants to cook and he wants you to share his passion about cooking. I literally cannot get enough of him.

    So I love him and I pray he’s doing well after Gloria died which is heartbreaking, after you have been married for so long there is a dependency on each other, may our lord assuage your loss my friend, Now potato-salad is interesting because everyone has their own way usually by a older relative and I am no different because I love my mom’s made with russet potatoes, hard boiled eggs sweet relish which must be Del Monte’s celery, green onions and in California it’s Best Foods mayonnaise. And salt and pepper and a spoonful of mustard usually what I have in the fridge and if you really want to guild the lily it gets chopped bacon. Where did mom get this recipe? Probably out of a magazine in the 1950’s, that was so big back then. I miss my mother so much and recreating her food for a brief moment I am with her again. Love Jacques and all his lovely recipes, what a gift this sweet man is.

    This is how I make my potato salad! I even mix the dressing in the (mayo) jar! If there is any left over, I mix in a tin of tuna and that's my lunch next day.

    Clean out the mustard jar with water - no waste. I love it. Most chefs on shows never clean out their pans, bowls, or jars!

You helped inspire my love of cooking, and the love that goes into creating delicious food. I cannot thank you enough. I know that time marches on irregardless...I’ve always thought of you as timeless and will always see the spritely, erudite gentleman of the kitchen and hearth.

    JP comes through so often. His demo's with no fancy equipment most people don't have. No impossible to find ingredients. No multiple hours or days of preparation. JP is simple, yet masterful.

    An excellent base recipe that one can "riff" on and make it endlessly variable by changing the herbs, seasonings, mustard and added proteins. This is what mastering technique is all about

    Wow, this rocked. Best potato salad I ever had. The chef hasn't failed me in more than 30 years of doing his recipes. The ingredients are easily adjusted to get the tang that you want. This ranks up there at the top with his Charles De Gaul leg of lamb. Or his chicken thighs with a cognac and mushroom sauce. And this was just a potato salad!😋

    I love JP. His studio is in his home in Madison CT. I grew up close by and was friendly with the 5 kids who lived there back in the day.
    I was at the home many times. Just old memories but still alive thanks to JP.
