  • German hot potato salad, known as "Kartoffelsalat" in German, is a beloved dish with a rich history. Unlike the cold, mayonnaise-based potato salads typical in many parts of the world, the German version often features a tangy, warm dressing made with vinegar and bacon, giving it a distinctive and hearty flavour.
Germany's potato salad traditions vary significantly by region. In southern Germany, particularly in Bavaria and Swabia, the hot potato salad with a vinegar-based dressing is more common. Northern Germany favours a creamy, mayonnaise-based potato salad, usually served cold.
Potatoes were introduced to Europe in the 16th century, and by the 18th century, they had become a staple in German cuisine. The hot potato salad likely developed to create a hearty, warming dish suitable for colder climates and seasons.
In its various forms, potato salad is a common accompaniment to many traditional German meals. It's often served with sausages, schnitzel, or other meat dishes, making it a staple on everyday and festive occasions.
The combination of crispy bacon and tangy vinegar is a hallmark of German hot potato salad. This mix adds a robust flavor and creates a pleasing contrast in textures.
Finely chopped onions and a touch of mustard are typically added to enhance the salad's depth of flavor.
    - *Warm Serving Temperature:* Serving the salad warm helps to meld the flavors together, making each bite rich and savoury.
Over the years, German hot potato salad has crossed borders and been adapted in various ways. In the United States, for example, it became popular among German-American communities and is often featured at barbecues and potlucks. While traditional recipes are cherished, many modern versions experiment with additional ingredients like fresh herbs, vinegar, and various spices to suit contemporary tastes.
Despite these variations, the essence of German hot potato salad remains the same: a comforting, flavourful dish that brings together simple ingredients in a way that highlights the ingenuity and tradition of German cooking.

Being a German I love warm potato salad. Thanks for making it to introduce it to some of your viewers that may have never had it. You’ve woke me up to making it again. For those who don’t like parsley use chives which I use quite often for color. I get dehydrated ones and they work fine Another great German foods is Bierocks a German cabbage, onion and ground beef roll I make them all the time, my mother made them frequently when I was growing up. They are so good warm out of the oven and brushed with butter. Cheers mate

I grew up with this dish. It is one of my very favorites. The father was first gen polish and German immigrants. Fathers parents had 12 children, half each of boys and girls and they all made this dish for their families. Holidays were filled with awesome European old world foods, passed down thru generations. Another of my favorites is pork steak baked in sauerkraut with potato dumplings the size of golf balls. I haven’t been able to find the dumpling recipe exactly but remember these were firm in the middle not all soft like american dumplings. Luckily I have reconstructed them from memory and taste. Thanks chef for the memories!

Horrendous bacon??!!! The best bacon is fatty bacon cooked until crisp and the fat renders out. As for anyone muttering about arteries-it’s all about lifestyle and quantity. Being born in the 50’s, the concept of low-fat wasn’t even considered. I don’t remember anyone being fat or having issues.

    Well done Rik!
My tastebuds were having happy flashbacks while you were eating.
The only minuscule difference between your recipe and mine is I add a couple of squirts of Maggi to the sauce and in the summer I use fresh chopped green onion.
Now accompany that salad with a piece of Kassler (smoked pork chop) and a Pilsner, you are in Bavarian Heaven.
Parsley freshens the breath and it has the added natural health benefit of stabilizing heart rhythms. When your heart flutters in anticipation of eating a delicious meal, a little parsley might be handy.

I know some people might find German potato salad a little strange (particularly my fellow Americans who are used to mayo type potato salad) but German potato salad just hits all the right notes....it's not as "heavy" as regular potato salad and the vinegar kinda "cuts" the fattiness of the bacon. But it's still hearty and filling. I will try your recipe!

Hello, Henrietta. I hope you had a great birthday! First, wrap the cheese in cheese paper or wax paper. These materials allow the cheese to breathe while maintaining the proper moisture level. After wrapping it in cheese or wax paper, you can loosely cover it with plastic wrap to add an extra layer of protection without completely sealing it off. Keep the cheese on the middle shelf, where the temperature is more consistent.
Keep the cheese away from the refrigerator door as the temperature fluctuates. I have my cheeses on the middle shelf towards the back of the refrigerator. I will say I only wrap in plastic wrap. Thank you. Best, Rik

    Ric:
I'm of German descent and fondly remember the church socials when the old frau's would bring hot German potato salad. I have tried for years to replicate this menu in my own cooking - always NOT ever getting the desired result. Tried your recipe last night and it was FANTASTIC!!! Just like I remembered. THANX!!!!! It is the roux that does it.
P.S. My German aunt (whose recipe I have used unsuccessfully) would be appalled that it took a 'Brit' to teach me how to cook a good old Germain dish. ;- ;> Keep up good work.

One of my favorites, but as always you always do just a wee bit different than I and it’s always a pleasing difference. 🙂 I have never added ( nor have I ever heard to), mustard.
Yum! Add to that the fact that you somehow make every thing you cook just so quick and easy. I have always reserved hot German potato salad for just a couple times a year because it seems more difficult. I can’t tell you why I have thought that for the last 40+ years , but I have.

Yes! Proper grub from another country. I served in the Forces in Germany many moons ago and loved the local food and general ambience. And then you take a holiday and visit another region of the vast country and find something completely different. Down in the deep south by the Bodensee it's fabulous man food. Excuse spelling but schwarben rings a bell. Dumplings, potato noodles. Just the sort of thing you need after a hard day of yodelling on a mountain top.

With all respect Sir, I know we have 16 federal states in Germany, and nearly every state has it's own recipes.
But with the potato salad in Palatine, has this salad nothing in common.
We slice the potatoes without skin only in thin slices, add a teaspoon of sugar, salt, pepper chive, onions, pickles, and perhaps bacon.
Add oil, water, vinegar and let the potatoes soack the liquid for some hours..

I love this channel and its chef. But as a Bavarian, I have to veto this recipe clearly. There are certainly many, many variants for potato salad. But in more than 60 years of life, I have never seen or eaten this flour mash anywhere in southern Germany. In Swabia and Bavaria, there is the lukewarm potato salad. But it's actually always made with broth and without bacon.
I cut onion very finely and sauté it briefly in butter. I pour boiling broth over the boiled diced potatoes and let it steep until the temperature is right. From vinegar, oil, mustard and a little broth, I prepare a classic vinaigrette. The broth of the potatoes is then drained and used for something else. Mix the potatoes with onions, vinaigrette and leave to infuse for at least 1/2 hour. 💖

People who are Squamish about good old bacon fat are missing all,the flavour😳my Italian mama in law always did the flour roux with the onions in all her soups, it's the best flavour ya can get😃👍🏼👍🏼👍🏼
