I was always told the opposite about the shiny side and food, haha--but your reasoning make sense. I will have to try that! I like how you had boiling water in the oven to create a moist environment. That roly-poly looks amazing with custard--and good to hear that the golden syrup version turned out great! Sometimes you get inspiration, and you have to run with it!
