Hello Scotty I just got the Lexington as my first smoker and I am smoking ribs today! Might sound like a dumb question but do you keep the charbroil grate closed to smoke the meat?
Nice pork butt, Scotty! As far as I understand it, you can still rub in your spices. But if you want a thick bark, you press or pat the spices onto the meat. I have no idea when this started...👍🍻😋

Smoking a pork shoulder butt this weekend. Where would you recommend I put it on the smoker? In the middle? Left? Right?
right side, back left seems to be the hot spot
Just a suggestion. Score the fat cap in a diamond pattern and it will help render and crisp up the fat.
some times i do. not a big fat cap scorer kinda guy. lol

Pork butt. Pork shoulder, same thing. Picnic shoulder the joint. More bone then meat
I was a masterbuilt guy for a few years where a water pan was necessary . I bought this exact grill , do you not need water pans for smoking ?
Water pan, in my opinion, is a personal choice. Sometimes, I use 1. some times I don't . A pan does make clean up easier.

No I haven't. . I just turn it down and open lid. Tell temp drops. Iam still working on it.

How many times did you have to refill the hopper for this cook?
none went the whole cook on a full hopper.
It’s a 15 pound hopper.

How do you get it to exactly to smoke with the p setting?
P SETTINGS kinda tricky. Higher the number better smoke. But could raise your temperature up. On colder days is better
