    Got the new Weber searwood new to the pellet game. Your video is helping me be patient doing a 17lb brisket put it on the smoker at 11:30pm it’s 8:49am bark is starting to come along. Going to be going to 225 soon I had a smoke box in my pellet grill as well. Great content you know what your are doing.

      Thanks bro!!! As you get more cooks under your belt you will get the little things down to get that brisket just where you want it. I will be honest three things that really help with the moisture inside of the brisket are the following.
      1. Overall Fat Content of the Brisket
      2. Temp you pull it
      3. The rest
      If you can find a prime grade at a choice price like I did you are definitely in the game. If its a choice sometimes its a crap shoot but I would leave a little more fat on the cap side to help with that.

    I gotta say this was probably the best/most helpful video I've watched without a doubt!
    Was there any prep you did to the meat we didn't see?
    I understand the long process at that temp but if we wanted to speed it up a little faster what's should be the limit on setting the temp?

      If you do want to speed up the process you could go hot and fast @300 degrees but usual the sweet spot would be smoking it 250-275 degrees that way you would get enough smoke flavor but not such a long cooking process. With that said if you hit a rough stall that could change the cook time no matter what.

      😂😂 please get invited lol. No you will be fine its all a learning process. One piece of advice I will give you. When its probe tender its ready. Some briskets become ready before others so some say take it to 200⁰ in some cases that will result in a dry brisket.

So coming back from vacation I knew we had to pass by it. Im glad i did lol. Buc-ees is the reason I got an Old Country Offset. I saw the price and told myself I got to get me one lol!

      I wouldnt risk it. Maybe a short nap but not a long period of time.

      Hey congrats on the new smoker!!! The smoker box isnt necessary but it gives your cook more smoke flavor. With pellet grills you dont get the offset smokiness and thats generally the biggest complaint about pellet grills.

      I have had this smoker for 2yrs and its done me well. I recently got an offset smoker but for project where i dont want to manage a fire it comes in handy. I like it personally its done the job for me.

      Congrats on getting the smoker! Everyone starts somewhere but with new things in life it perfectly fine to be nervous. I got a whole playlist on the Lexington that you could follow and other smoking vids that will give you tips and tricks. What type of meats are you most excited about smoking? Try some inexpensive cuts like leg quarters or chicken legs. Also you can find the beef riblets that are inexpensive at Walmart (about $8-10 a pack). But to be honest just have fun and make sure not to start the grill will the lid down! Let the smoker start up then set your temp after the flame catches and you will be in the game!       I just did a vid on a pork shoulder/butt. Those are pretty simple and fun ones to smoke. You will get better at each smoke session. Go at it and dont look back!!!

      It is a 15lb hopper. It was good overnight and I refilled it that morning.
