Pickled red onion recipe:
1 whole red onion
1 habanero pepper
1 cup vinegar(your choice)
2.5 cups water
2TBS salt
1TBS cane sugar
1-2 glass jars
Heat up vinegar and water, dissolve salt and sugar at low simmer.
Slice red onion into rings, slice habanero, add to empty jar.
Add the hot vinegar mix into the jar with onions, seal, let it cool down. Pickle for at least a day before eating.

Even though I went to culinary school, I’ve learned so much from you . You truly are an inspiration !
here we have different "pickled" types of herring to preserve it for breakfast, sandwiches, snacks, etc. eaten cold:
1) pickled with vinegar, sugar, pepper, mustard seeds, bay leaves, juniper berries, onions, etc. (taste is _slightly_ sour. meat looks grey) (german word: "Bismarck Hering" or "Rollmops")
1.1) another version is to batter the herring with flour and fry it BEFORE pickling it. this way you get a roasted taste and different consistency combined with the pickling taste. (german word: "Brathering")
2) pickled in a light salt brine. it's a slight fermentation process based on lactic acid that's forming. (taste is soft and hearty, little salty. meat looks pinkish) (german word: "Matjes")
3) pickled in a heavy salt brine (>20% salt). This is to make it extreme long lasting but also you need to put the fishes in normal water and keep them for at least some hours to reduce the salt. Probably my least favorite way because taste gets really watered down or is too salty. (taste is salty or kinda plain. meat looks grey) (german word: "Salzhering")
4) not really pickled but in a tomatoe based sauce and then locked in glasses steamed (preserved) to make it long lasting. This you often find as canned food in grocery stores as well (herring is cooked, texture is way different) (german word: "Heringfilet in Tomatensauce")
You said you tried some herring in amsterdam. I'm pretty sure it was Matjes then as it's (at least from my knowledge) really popular in the netherlands as well.
Maybe that's why you tried to color it by using your red onions ;)
Also here we often have the herring without head and gutted but with the backbone, fins and everything still on it. So no need to filet them when having smaller fishes. The bones get broken down during the pickling and you don't even recognize them anymore.
Another great way we eat herring over here is to fry it up in a kind of tempura batter or coated in flower. Crispy from the pan you don't recognize the small bones and it's really good!

In Holland we mainly eat herring in two ways:
1. Raw with raw onions and pickles, either chopped into bite size pieces, or the old school Dutch way, by picking it up by the tail, tilting back your head and lowering it into your mouth. This is early on in the herring season, when they aren't spawning yet and are still nice and fat.
2. 'Sour herring', or rolmops, so pretty much the first type you described.

I was almost certain that we had the same types. Best matjes actually is from the dutch fish guy on the weekly market here. With a lot of onions and some fresh bread rolls :)

Wow!!! I'm so glad to watch herring sushi. I thought herring sushi is my own creation!😁 I have just started working with Feature Foods which sells pickled herring in North America. We want to export this to Asia and that's how I got involved (I'm Korean and our first target market in Asia is Korea). I was searching for the ways to market this healthy and delicious pickled herring which is very unknown to Korea. That's how I come up with herring sushi and I made TH-cam videos with herring sushi with my husband few times.
Because my husband and I were not chefs, I was always wondering about how people would take herring sushi even though my family love them so much. You wouldn't imagine how happy I am to watch this video, especially, from the TH-camr I always enjoy to watch. Thank you for such great and fun videos. Very enjoyable!

The herring chops in the sunset.
It is rare to see herring catches in the sport fishing media, but the fact is that it is the herring that attracts thousands of fishermen to the coast. Right now you can take it from the sea ice.
I have never seen such an outclassing in fishing. Ten-fifteen years ago I met a group of anglers originating from Vietnam who were absolutely outstanding in fishing herring from the ice. When the rest of us, at best, managed to scrape together about twenty herring on a fishing trip, these anglers caught so much that they supplied friends and acquaintances with deliciously fresh fish.
Fishing for herring with a line can appear so simple that it is not really fishing. Nothing could be more wrong. Sure, on some days the herring will attack basically anything that is small and moves seductively in the water. Other days it can be close to impossible to attract. On such days it may be an idea to test different hedges. Everything from tiny hooks to mackerel hooks in the smallest sizes can work. Personally, I always have a couple of micro hooks with size 16 hooks. They have saved me many times when I needed fresh bait or when we wanted to have herring for dinner. But sometimes nothing beats a blank hook, I learned that from the Vietnamese anglers.
I can't even begin to tell some of you guys how much this resource has meant to my forefathers. Even me as a kid in the 90's tried, we have nothing left of the herring. It's bitter sweet to see this bounty from the pasific whereas I get......... nothing.
