How to make holographic chocolate

    Recipe :
    Holo praliné
    1 220g Almond and hazelnut praline
    23g Tea blended into powder
    2 15g Cocoa butter Mycryo
    32g Beurre noisette
    50g Alunga milk chocolate 41%
    25g Ocoa dark chocolate 70%
    3 50g Feuillantine (blended)
    0,5g Salt (fleur de sel)

    Mix 1 together. Melt and mix all 2 together. Mix together 1 and 2, then add 3.
    Keep in the warmer overnight (1 day) to infuse the tea in the fat of the recipe. (That’s the best but it can be used directly)
    Temper like chocolate to reach 25°c and then pipe it.

    The physics of light are so amazing. I had a hard time convincing a friend that nothing had been transfered to the chocolate except an impression of the microscopic ridges of the diffraction mold. He still looked a little doubtful even after a detailed explanation.

      You can purchase it through Amazon as I also did.
      It’s called a diffraction grating sheet as I have mentioned in my video. I will share very soon one more video with a new supplier. Be a little more patience please 🙏😊
      I really don’t know about how many lines per mm and I am not even sure if it’s mentioned when you purchase it. But as long as it’s a diffraction grating sheet it’s ok ! ;)

      @@MissysGourmandisesDouces Hi Linda, There is a smooth or unprocessed side and an embossed/processed side...the side with the diffraction surface. You can take a little drop of water and put it on the corner of the film. If the pattern or rainbow on the surface disappears, then that is the processed side. If you put the water on the unprocessed side, you will see the pattern or rainbow spectrum through the sheet and the water. I hope this helps. The chocolate goes on the processed side.

    I understand that it’s the impression that makes it that way and you’re not transferring stuff onto the chocolate, but wanted to know since it is touching food you’ll be eating, is diffraction grating material food safe or is there a specific brand of diffraction grating that’s purely for use with food?

      Sorry for such late answer ... It’s just a normal diffraction grating sheet, but then it does work like a transfert sheet.

    So amazng! It's really about scienceand technique!
    Holo is because of physical texture, but I guess achieving the smoothness with chocolate to follow the texture is really depending on the skill.
    I cannot imagine how difficultit it is because I don't make any sweets.

      The shining come from tiny groove inside the plastic sheet that we can’t see, but once we remove the plastic from the chocolate then the light reflection is affected my these little grove and make it shin like a rainbow ;) it’s all colors from the light ! No food color at all, that’s why it is amazing ! 😁

    I finally bought the sheet. Does it work on both sides? Or is there only one side that works? I tried it, using the rougher side and nothing showed.

      It’s usually only on one side. And maybe the tempering wasn’t perfect .. 🤔

      You mean it’s a general question and you want to know if you can do with sugar/caramel/toffee/candy. I always saw something like this .. so I guess possible but would take some time to masterize the technique and I personally think the chocolate would always have a better result.
      Or did you meant .. you wanna see me doing this kind of video ..?!

      That’s a good question, first it depend on the quality of the plastic sheet, mine was really thin so I can break easily, I would say maybe around 5 times .. and more if you really pay attention.
      But I think the very best result is when you use it the 1st time because it’s totally clean !

    ホログラムがキラキラして綺麗でこんなチョコは見たことないです
    0:44あたりから型に入れたチョコをひっくり返して、そのチョコを混ぜ混ぜしてまた型に戻して、更に白いバケツに入ったチョコを上からかけたりして英語の字幕で訳が分からずなぜそのような事をするのか謎でした。
    なんの為にそうする必要があったのだろうか...?
