I was traveling from the north of Vietnam to the south via bus and I had a 4 hour layover in Hue. I decide to get lunch before my bus left at 1pm. I approach a typical corner street food restaurant with no expectations of what was to come. I order the only thing even on the menu. I didn't even know the name of what I was ordering. It took only one bite to realize I was eating the greatest soup I had ever had in my life. The soup? Bun Bo Hue.

I also think the bowl was awesome, it made the soup look even more appetizing because you could see everything that was in it. And that lady was sooooo cute, great customer service for sure!

Freddy Lon They use pineapple to tenderize the meat. Originally, Bun Bo Hue doesn't have pineapple. I, personally, don't like to add pineapple in my BBH, the flavor is gonna be slightly changed doing so. ^^
My mom knows how to make this but she rarely does for my family. I love it more than pho. I'm not good at speaking Vietnamese compared to when I was younger so I never knew what this was called to request for it. Now I know lol. Thanks for the video and love your enthusiasm for food!
Bun bo Hue does take a lot of time to cook ,3-5 hours simmering, preps is 30 minutes. It’s not too difficult to make. There are lots of Bun bo Hue recipe on TH-cam. Just in case your Mom doesn’t feel like making it. You can ask local Vietnamese where is the best bun bo Hue in your area is a faster way to enjoy the soup. I know this is an old post😀 hopefully your Mom made the soup for you already
Mark Weins, bún bò Huế was originated from Huế. Soup base is lemongrass, chillies, garlic, and shrimp paste to get that flavor. Meat is beef briskets with tendons & pork feet and pork cake or sausage as you said. Yuy, I love that stuff, so good. You really enjoy food. Love your expression.👍😃

Mark, As I watch these videos, it's amazing the misconceptions that most westerners (including me) have of Southeast Asia. I would never have guessed that Vietnam Myanmar, Thailand, etc., have such a wealth of healthy, locally grown food that is prepared with such care and in a tradition that is rich in cultural history. I've seen you eat dishes in back alleys of little known places that make most of the 'popular' food sold here in the U.S. pale in comparison and for a fraction of what it would cost here. ma za Pig's trotters are my new favorite dish. There's a Shanghaiese joint in the Shibuya area of Tokyo that does peanut-sauced, smoked trotters for about $4. Amazing!
Hey Mark Wiens , this is just some information I wanted to share and thought you might wanted to know, the "Bun Bo Hue" (BBH) that you enjoyed really is trickled down version of the authentic one, and made for the southerner's tastebuds. Also, if not all "BBH" base for the soup consist of lemongrass, pork & beef bones, so really its not an all beef affair here. The base should have an umami-like taste, with all sweet, savory, spice & a light tang, not "citrus" like you've described. Anyhow, the "chunk" of meat that you enjoyed is actually not beef, it was just a pork hock. The sausage is not fermented, it's actually just a regular Vietnamese style pork-ham that you find in our "Banh Mi" as well, but this one is just prepared in the "Hue" style. The beef that they use should not be "grizzly", it should be tender with just a little chew and texture like the sirloin that the original one would use. I know that you enjoys thai-style level of spice, but holy smokes that is really a lot of pepper flakes, and pickled pepper you put in, i suggest that if you could tone it down a bit to really enjoy the umami-ness of the soup that I'm afraid that it was over-powered by the peppers. Overall, I'm glad that you enjoyed the dish, and $60,000 VND for the dish? That's a good bang for you bucks. I hope next time that you get to enjoy the "authentic" style of this amazing dish. Same. I noticed some of the same things. I live in California, I’m a large city with lots of Vietnamese people and this is one of my favorite soups of all time. My parents are from Mexico and I went on to be a chef. I LOVE bold, funky, fermenty, seafoody, and squishy textures. I love the pork hock but I hope to visit Hue soon. My kids are 10 and 7 and they’re already obsessed with Vietnamese food and want to visit! For being so young, they’re very money/price/value savvy and they Cannot believe the prices for bowls there!! With we had slightly cheaper prices here and smaller portions so I can order a bunch of things! 😅 A bowl here is around 17 USD before tax &tip.

Dude, $2.76 for that kind of meal and especially for that kind of service is amazing, I literally want to visit Vietnam just to go to this restaurant for this dish. In America you can't really get any quality food like this for $3, the most you'll get is a simple boring hamburger with nothing on it, I just love how much consideration goes into the food itself, and you can tell that woman really did help make it the perfect dish for a specific customer which isn't something very many American restaurants will do.

Mark, the next time you’re in Philadelphia, you have to stop at Cafe Diem for their Spicy Bun Bo Hue. I could eat this dish for every meal for the rest of my life!! They have a couple different cuts of beef in it, a decent size pork hock, and tendon. One taste of the spicy broth and you’re hooked. I always order a side of extra tendons. As always this was a great video. And that lovely woman who made your dish was a sweetheart for making you a fresh hot bowl.
Hi Mark, I also went to Saigon in Dec last year and had Bun Bo Hue at a place called Dong Ba in District 1. It was great. I like it even better than Pho.

Many can tolerate soy sauce I would say. Here many people would relate the smell of fish sauce to spoiled rather than "yummy lol it's not really their fault.
I loooove the flavor of a good fish sauce. But it has to be good quality. One of my favorite Vietnamese dishes is actually Bun Mam. Most foreigners like me can't take it but I love it

Hi Mark, I'm glad you're currently in Vietnam! The citrus you're tasting is indeed pineapple. I believe the meat loaf thing you ate is cha hue (Vietnamese meat loaf but Hue version) not nem. Also, with bun bo hue, you can ask for extra sate and that'll give your bowl an extra kick of spice! Will you consider trying Bun mam? It's another noodle dish but the broth is made from pork and fermented fish. The fermented part sounds scary, but it's a delicious bowl of goodness!
Hey Mark! I just started watching your travel food videos starting from your travels in Vietnam. I'm Vietnamese myself and I've only visited once when I was younger. I do very much appreciate all your videos and cannot wait to make a trip to Vietnam again. The noodle soup you're eating is something I'm very familiar with. The big chunk of meat you're eating is actually a pig's foot and the "fermented sausage" is called cha gio or cha lua which is a vietnamese pork sausage, the same thing you had on the side with your banh cuon. Anyway, I'm glad to see you're enjoying the cuisine and hope to see many more videos soon!

It appears that there are 2 types of bún bò huế: a) authentic bún bò huế has a clear and elegant broth that you do not want to add veggies, b) southern bún bò huế has huyết (pork blood) and a darker and flavorful broth that you may want to add veggies. The above video shows a southern bún bò huế with lots of minced lemon grass (sả).

Hi Mark, I'm glad you're currently in Vietnam! The citrus you're tasting is indeed pineapple. I believe the meat loaf thing you ate is cha hue (Vietnamese meat loaf but Hue version) not nem. Also, with bun bo hue, you can ask for extra sate and that'll give your bowl an extra kick of spice! Will you consider trying Bun mam? It's another noodle dish but the broth is made from pork and fermented fish. The fermented part sounds scary, but it's a delicious bowl of goodness!

Hey Mark! I just started watching your travel food videos starting from your travels in Vietnam. I'm Vietnamese myself and I've only visited once when I was younger. I do very much appreciate all your videos and cannot wait to make a trip to Vietnam again. The noodle soup you're eating is something I'm very familiar with. The big chunk of meat you're eating is actually a pig's foot and the "fermented sausage" is called cha gio or cha lua which is a vietnamese pork sausage, the same thing you had on the side with your banh cuon. Anyway, I'm glad to see you're enjoying the cuisine and hope to see many more videos soon!

You should try the original Bun Bo Hue in Hue which is very special, very delicate and much delicious.

It appears that there are 2 types of bún bò huế:
a) authentic bún bò huế has a clear and elegant broth that you do not want to add veggies,
b) southern bún bò huế has huyết (pork blood) and a darker and flavorful broth that you may want to add veggies.
The above video shows a southern bún bò huế with lots of minced lemon grass (sả).
