Hi Yodit, basically the process is the same, you bake it on the third day, it’s best to add gluten free flours (rice or quinoa) or barley to make it softer. The Teff flour does not behave the same as the one you would get from back home and is not as good. But you can try it and see if you like it...thanks for watching 😊

Thanks for the photo of five types of injera. Please identify them in English if you can add subtitles. I live in Alberta, Canada and just walking down 17th avenue in SE Calgary many shops sell these huge probiotic spongey crepes. I bought the ones advertised as 50% teff and 50% barley. Slightly sour and great for soaking up wet foods. CAD7.50 for six. They do fall apart easily though. Handle carefully! I notice from watching your other instructional video on teff-barley injera that you show *three* (not two flours). What is the third one and why do you add it?
Thanks for watching: ) The six grains/flour are Teff, barely, millet, quinoa, corn and rice. As you noticed I added small amount of rice to the Teff and Barley recipe as it is helps it “not to fall apart” and stays fluffy longer days. ( 50 Teff 50 barely is always going to break apart so I usually use more Teff in the mix) Teff and quinoa makes the best Injera.

I read that there is a very dark whole grain variety of barley that is grown only in Ethiopia. But all I can find in my city is roasted barley (for a drink I presume, like Japanese take in the heat of summer) and also standard pearl barley. I do not see any whole grain barleys in any Ethiopian grocery stores in Calgary.
