- There are so many versions of the maja. The authentic maja used carabao’s milk. Today, we use coconut milk. There are also many flavors of the maja, but mais and ube is still the most popular. In this tutorial, I am
showing you both maja mais and maja ube. For presentation purposes, I put them together in one mold to make them prettier. You don’t have to make the two flavors. Some versions use condensed milk to sweeten the maja. My version is simple and more traditional. There are now maja recipes which are topped with grated cheese. My version still uses the traditional toasted sweetened sapal for topping.
Chef’s Notes: For the coconut milk, use the powdered coconut milk or the canned coconut milk. I used 150 grams coconut milk powder plus water to make 4 cups. If using canned, use coconut milk NOT coconut cream. Do not use fresh coconut milk because it has a shorter shelf life.

Did you add the cornstarch mixture like what you did with the maja mais? I’m curious because I also cook maja blanca with condense milk. If using ube powder, how much ube powder and ube extract to use?
If you are using dehydrated ube powder, use 3 tbsp. and 1 - 2 tsp. ube flavor and color - depending on the brand you are using.
