- Butter Pie, Friday Pie, or Catholic Pie is a traditional Lancashire dish with a special place in Liverpool and across the North West of England. The pie's origins are closely tied to the region's Catholic heritage, particularly in areas with a strong Catholic community. Historically, Catholics abstained from eating meat on Fridays, and Butter Pie became a popular meat-free alternative. The pie is simple, made from potatoes, onions, and butter, all encased in a flaky pastry. 65ml Water
150g Shortening
50g Butter / Marg
1 medium egg
1 tsp Apple cider vinegar
1 tsp salt
For the Filling: Minimum ingredients
1 lb (450g) potatoes, peeled and thinly sliced
2 large onions, thinly sliced
4 tablespoons unsalted butter
Salt and pepper, to taste

Hello, Rik. I had to make this...sort of. We were going out of town and needed something to eat while driving. I made this pastry to use. Mashed potatos, onions, butter, salt and pepper for the filling. I made this into pasties. Yummy! Thanks for the inspiration.
Any 'fancy' ingredient can be substituted. Improvisation and adaptation are the essence of cooking.
My mother made the same pie called Potato Pie (from South Dakota, US) using some caraway seeds, which I love. Probably because potatoes are native to the Americas, there are many versions. I often make it with Spanish onions (purple) from my garden. She always put nice designs on top of the pie for added eye appeal. She was raised on a corn farm, and it was not unusual to find little corn designs on the top of a pie, even if it had no corn in it. It was my job as a child to roll the tiny circles to make the corn kernels for the design. Oh my, I'm 65 now. Times flies.

Savory pies just are not as popular in the US,the UK has so many pies both savory,
and sweet.I don’t think that many people here would want the double carbs,actually I suppose it’s triple carbs,as there are carbs in the onions,especially these days with so many people on low carb diets.

Amazing how many of my USA family's recipes have deep roots in the UK. The Catholic part of my dad's family made this quite often as "Friday Pie". And my maternal grandmother made it for the power company workers who ate at her resort - she called it "Lineman's Pie". CHEAP, high calorie and filling.

I can see my grandmother making this during Wartime to make her rations stretch and using what is grown in the garden.
I agree but can you make this with no butter? (Rationed) What would it taste like made with all lard? It's then getting close to a Woolton pie without the extra root vegetables. However maybe this was one of the inspirations for Lord Woolton's famous offerings!

True. I'm from the US south and regional cooking needs to be preserved. I grew up eating stewed tomatoes in a milky gravy sauce and peas with rice and old fashioned non mix chocolate pies,etc And of course okra tomato gumbo.

Potatoes and onions in a pie? Genius! We Catholics are right in the middle of Lent so this will be perfect for Fridays. As far as seasoning goes, for some reason in Italy, they always season potatoes with rosemary. I've had pizza there that was pretty much potatoes and onions with rosemary.

I’ve been trying to find loads of easy basic meals to make as with a lot of people, money is tight! The recipes from this channel are so brilliant . Normally I would discard certain things e.g. potatoes with sprouts on them.. Not anymore. Just peel them and use them with the advice. Fabulous and tremendous. 😊
Don't throw anything! Even slightly shriveled it still cooks mate. I've done the posh nosh, I've stood the line. Had the restaurant, worked the takeaways. You know what, the basic grub that goes on my table I love. Beans on toast being one of them! I can make anything into a savoury bread pudding! Filling and tasty. Hello Rik, I'd forgotten this pie. My Mum used to make it when we were young. She called it a potato and onion pie, but it must have been like yours. Mum always made thick, crusty pastry to fill us up. Which we loved. We also had peas and mash with it too. Good, wholesome food.

Our (RC) school butter pie was mashed potatoes. Topped with onions and a suet crust. Served with grated cheese and diced cooked beetroot.

Still a Lancashire tradition! 👍 Eat the same during the week with a bit of meat in! Apparently if veg grows above ground you put it in boiling water - if it grows below ground you put in cold water and boil! I just boil the kettle!

Hi Rik watching your videos has inspired me to have a go at baking. I purchased an Hysapientia 24ltr and baked some chocolate chip cupcakes, just to try and get a feel for how the oven actually cooks. The actual recipe said cook for 15- 20 mins, but the Hysapientia done them in about 8 mins at 170 degrees. Turns out the preparation took about 20 mins, and the baking took less than half that. I previously had a Ninja dual, which is 9.5 ltr. However I found the Ninja very restricting. The Hysapientia will definitely be my go to air fryer, and I feel it will leave the Ninja redundant. I lost my wife in 2020, to lung cancer, and it left me feeling lost, and was looking for something to do, that would give life a purpose, and watching your videos has done that for me. I really appreciate what your doing with the channel, and how you've given me a reason to enjoy homemade cooking and baking again. Hysapientia should be paying you for all the sales your channel is creating. Keep up the good work, and just keep doing what you're doing. I'm learning! Now if you pick up any tips let me know! I've cooked for a little while and the big combi ovens have been my go to. I actually like this little oven. I say it as it is as you know. I think this oven for pies and pastry's is second to none. I just think if they had incorporated a high and low fan with a full range of temp this oven would be very hard to beat by anyone. Its would have been a game changer. The problem with convection/airfryer ovens is the high fan. This has the bake setting with a low setting why not with the full temp. It is what it is. Thank you. @@BackyardChef I think that's what I like so much about your channel. The no nonsense, and just saying how it is, just like a true Yorkshireman, straight to the point and no bull. After seeing what you've already cooked in the Hysapientia, and I would never have attempted in the Ninja. Just the fact you have a way to view the food cooking, is a total game changer for me. I have just purchased the the rotisserie basket, so I can roast nuts etc. If I'm honest Rik I bought the Ninja mainly because of the high energy Bill's. That said it almost became an ornament, because of the small compartments, and not really feeling any inspiration. I also think that because the Hysapientia has a bottom heating element, unlike the Ninja, makes it far more versatile. I already feel buying this smart 24ltr oven, is a game changer for me, and it's a fraction of the cost. If I come across any recipes I think you may like, I will definitely forward to you.

This looks divine. I am guessing that "meatless Friday's" were because of hard times. Your paycheck went for a Sunday meat dinner that was for leftover Monday and you just scraped by with what you had bought till Friday for the next paycheck. We really could learn from this. Not really. Meatless fridays we’re due to the Catholic Church. It was normal for fridays to be meatless in the Catholic Church, so that’s when you’d have fish and chips, or fish pie or cheese pie. I well remember in my youth even here in NZ that fridays were fish days.
I’m going to make it today but because it’s not Friday I’m going to serve it with hamburger gravy. A fancy version on shit on a shingle. I think the pie will pair well and be delicious with a side of the gravy

The trouble is vegetarians need to eat some for of beans,lentils,or tofu especially if the don’t eat dairy they have to get protein,and pies like this don’t give you much,and that’s why you see a lot of chickpea recipes.By the way I’m not vegetarian.

Italian-American Catholics have a similar thing - potatoes and eggs. This is a simple frittata consisting of a cast-iron skillet full of well-browned potatoes poured full of beaten eggs which have been laced with grated Romano cheese, plus a few sliced olives, bits of onion or whatever. Cook on the stove until the egg begins to set, and then mozzarella the thing to death and pop it under the broiler (WATCH CLOSELY) until the mozzarella has melted, browned, and turned gorgeous. FANTASTIC with a nice stout.

Years ago at a seminar, there was an American who at a buffet slathered his plate with mustard. I had to warn him it was English mustard and not American. He was quite taken by it, but had to get another plate of food.

Here in Germany people still can have a funny opinion about british food.
I am not a teenager anymore, but being married to PATRICK for a really long time, having lived in SUFFOLK for 14 years, I love BRITISH COOKING and I know our British food.
Go to a typical country pub for a SUNDAY ROAST, you lick all your fingers and want more.
All the pies, Yorkshire puddings you name it are so delicious. By the way, we love TOAD IN THE HOLE, something which comes on my menu list.

I try to cook a mixture of both : British and German recipes.
Ask a German about BREAD SAUCE ? This is a MUST which always goes with our turkey.

When I was around 7, I remember watching my paternal grandmother making a potato pie. Only thing I could remember was slices of potatoes, and her salting and pepper the slices, after that it is a blank. I know it was a two crust pie. I have been searching for this recipe for years now, only using search terms white potato pie, no results. No idea it was called Butter Pie. My grandmother's maternal family was from the north of England, probably where she learned this dish. Thanks for such a well explained and delicious looking recipe.

Doing that pie and adding MORE spud (mashed) and great looking peas, that my friend is a banquet. I would only make a light gravy using some spud cooking water to make it all perfect....

It has been such a comfort to watch you make pie crust. So simple compared to adding ice water or vinegar, freeze the dough, thaw the dough, freeze it again whatever. I love to keep it simple.mtks
