This is a suggestion coming waaaay too late, but have you considered turning the upper laundry hallway into a bathroom (shower at far end, then existing sink, then toilet by the door, and either properly walling up that step-down or putting in a door? The existing area could become a walk-in pantry.
It's been lovely. My neighbor below isn't happy with loud pounding, since it's his professional office! Otherwise, people are great and expats are moving in.

I really like the Salento and the people are nice. It is easy to learn Italian when I'm there, since very few people speak English and you have to use Italian. But, when I'm in the US it's harder since there are really only online options. I'm looking to find a live tutor.
