Casseroles WITHOUT Cream Soup! 1950s Green Noodle Casserole

  • Yes, you CAN make casseroles WITHOUT cream soup! Retro casserole recipes often contain cream of mushroom, chicken, or celery soup, but this one is a just little bit different.
    I love casserole recipes that use leftovers, and this one would be a fantastic way to use up leftover ham from a big family or holiday meal.

    GREEN NOODLE CASSEROLE (ABC of Casseroles, 1954)
    1lb green noodles
    4c ham, diced
    3c Swiss cheese, grated
    2c sour cream
    1/2c sweet cream (use heavy cream or half and half)
    3Tbsp flour
    1/4tsp salt
    1/4tsp pepper
    Cook noodles, combine with remaining ingredients and bake in well-butter casserole* in a moderate oven (350 degrees) for 1 hour. Serves 12.
    *I cut this recipe in half and used a 2.4qt casserole dish. If you're making the full recipe, you could use a 9 x 13 pan or glass baking dish.

      Hello. I’ve seen in multiple videos that you half the recipe, but are cooking for the full amount and temperature. I would suggest adjusting the cook time or temperature if making a smaller portion.

    Our family's go-to cruchy casserole topping is crumbled potato chips. That would work well with the ham flavor.

      After dinner coffee with dessert was a go to with my inlaws. My Dad didn't drink coffee so we never had it, Mom had a cup in the mornings, I don't remember past that.

    I loved this video. I also think it is really neat how you sit and chat about your thoughts on what you made and the cookbook, and give a little insight on what different things mean like a moderate oven. Your channel should be huge!! Lol

    My ex husband used to tell me all the time about laughing while eating dinner or afterwards..we were always joking around or watching something good, it always made disgestion easier..it is actually true. And my grandma always had after dinner coffee every day

    Yay Peter Pauper Press! And nice jacketed copy, too. This really sounds pretty good, and uses things I have most of the time. That's one thing I like about PPP, their recipes always seem very *achievable*.

    This looks so delicious, I love the pink ham contrasting with the green noodles.
    Anything with a carb and sour cream and cheese can't not be delicious.

    The only green noodle(s) I’ve cooked are the tri-color veggie Rotini noodles- for a creamy pasta salad & an Italian pasta salad. haha! I’ve never seen the kind that you’re cooking with at the store. I’ll look around. Also, I will definitely be looking for these cookbooks when I go treasure hunting, again. They’re adorable!       My backup plan was going to be tri color rotini if I couldn’t find spinach noodles. Another commenter mentioned seeing green noodles at Big Lots, so if you have one nearby it might be worth a look!

    Around here, I can find Ronzoni Fettuccine that is green. Not every supermarket has it. I also find green noodles at Job Lot or Big Lots stores. Looks good. I agree that a crumb topping would be great.

    Interesting to know that "moderate" temperature means 350 degrees. This was a nice casserole - it is interesting that we gravitate more toward texture and more vibrant seasonings now. I love all things casserole, but would prefer a crunchy top.

    Hmmm…. That’s interesting. I’m allergic to mushrooms anyway, so I can’t make it with the ubiquitous _condenser cream of mushroom_ soup. I sub another cream soup in it (and add beau Monde seasoning). I’m wondering if this might work to avoid the cream soup altogether. Thanks for sharing this!

    What would you think of cooked chicken with mozzarella subs on this? Maybe a light alfredo type casserole?? Just not ham I guess...and buttered panko and parm on top.
