Ha!! I must admit, this one is even making me hungry. I vacuum sealed a few pieces to freeze for later. Might need to dig those out soon and reheat them! 😂 This reheats really well in a pan on the stovetop.

I got the Moosewood cookbook years ago as a gift, and bought the Enchanted Broccoli Forest for myself. I don’t remember which one it was I got Lentil Soup from, but I use that recipe to this day off a stained and beat up sheet of paper that has seen better days. It made it into my regular lineup of recipes, and never came out

This looks amazing! And as a Greek, I've worked with phyllo before. If you cover it with a damp towel, you can take your time assembling and it won't dry out. And yes, you can make the dish ahead and refrigerate it. My mom used to make hundreds of individual cheese triangles or tiropites and freeze them. We would even bake them from frozen and they worked out perfectly. I love your channel btw and I'm slowly going through all your videos. TFS!
I loved Mollie Kaizen's books, and her Moosewood Cookbook was one of the first I owned. I remember making this back in the day, but had forgotten all about it! Thank you for bringing back some amazing memories!
I felt the same way about both cookbooks as far as expanding my horizons, and I remember driving an hour to a specialty store in Wichita from my small Kansas town to get ingredients as well. My one disappointment with the author is that I found so many of her recipes to be bland I although not this one, probably due to the feta.)
After having dinner at a family friend's home, and the meal consisted of many dishes from The Moosewood Cookbook, my mom got a copy. I was in high school :) The Moosewood Cookbook, and The Enchanted Broccoli Forest were two of the first cookbooks I bought, after buying The Joy of Cooking and The Fanny Farmer Cookbook. I thought I was so daring, having not one, but two vegetarian cookbooks on my shelf. I have followed the quiche "formula" from Moosewood for over 30 years. I also love the Orange Cake recipe. Flash forward many years, and I have all 3 of her "cooking with kids" cookbooks, and have enjoyed making many of the recipes with my own children, and those I have taught. The granola is outstanding!
Every Mollie Katzen recipe I have tried has been outstanding! Thank you for the suggestions, I will check out the quiche formula and orange cake!

I love this book. It was a favorite years ago. I never made the Greek Pizza but I did make the Zucchini Crusted Pizza a few times. The drawings were incredible. Molly was so talented. All of her books were beautiful.
I love her drawings so much! I just found a copy of The Moosewood Cookbook at a library sale and can't wait to dig into that.

I have been cooking from Molly Katzen's Broccoli Forest and Moosewood cookbooks for over 40 years. My favorite lentil, refried beans, and salsa recipes are in these cookbooks. I have made most of the soups and haven't found one I don't like.

Love Molly Katzen. I learned to cook following the Moosewood cookbook and Laurel's Kitchen (not part of Moosewood.) I have eaten at the Moosewood restaurant a number of times. Sundays at Moosewood has amazing recipes. They are very rich and indulgent. (Mushroom Pie, hint, hint) I agree that The Moosewood Cookbook is exceptional. I think I'm making a sheet of Greek pizza for lunches next week.

I have all of the Moosewood cookbooks. My favorite is Sundays. It has an Iternational selection of recipes cooked by patrons on Sundays. I also have Molly's daughter's cookbook. It's not vegan. More for the .overnight mother

OH my word, it is SO good. I still have a few pieces vacuumed sealed in the freezer. The leftovers reheat really well in a pan on the stovetop.

Great recipe, love feta. Had the original Moosewood but gave it away. I'm in a small college town and some food items are hard to find. Phyllo can only be found around the holidays at a couple of stores.

OMG!! That was one of my very first cookbooks as a teenager and I wore that thing OUT!! So many great recipes. I somehow lost it, but now you are making me want to get another copy. This pizza was a recipe I did not try but gosh it sure looks good!! I love greek anything, so why not pizza??

I ended up vaccuum sealing a few pieces to freeze for later. Now I can't stop thinking about them! Individual pieces re-heat very well in a pan over low heat on the stove top...that is, if you have any left! 😄

I have this cookbook too! I didn't use it much, but liked Cheese Tyropitas on pg 139. My notes mention I used the leftover filling to stir into cooked potatoes and seasonings and baked. Almost liked it better than the tyropitas. Please, please, has ANYONE made the actual Enchanted Broccoli Forest recipe? I never tried it.

1. I just found you (this month-ish) and I’m working my way through your library. You’re brilliant fun and thank you so much.
2. Phyllo - you have those spray bottles with olive oil that you use for cooking spray? Try one of those (or a new, clean spray bottle) with melted butter and/or olive oil to spray down the sheets. It’s a faster, more delicate way to spread the fat. Anyway, you did a great job with it.
3. Do you have the first Moosewood book? If you do (and you like mushrooms) try her moussaka. I have vegetarian cousins and this was always their Thanksgiving request.
4. YES please try the pumpkin soup at some point. I’m so curious.
I don't care for olives but my daughter loves them and so did her dad. My son would say they're dirty. He meant they taste like dirt. I had to agree.

I'd love to find an original of this! I have the original Moosewood book, and love it! I also have Sunrise Cafe, hard cover, and it's a very professional and great book, but no whimsical drawings. Her website has a lot of great recipes, too.

You comment about a small town cracked me up. I live in a small town in Central Texas. The only chain restaurant is a Subway, there is a place that does pizzas & burger that really sucks. Having grown up outside Chicago I ate a lot of great pizzas. Now I'm in a pizza desert. Even driving an hour away yield bad pizzas. This greek pizza looks pretty good, but you scared me off with the phillo dough.
