I own the Noma Guide to Fermentation and have been thinking for a long time about also making my own koji trays but could not find information online. Been looking into Japanese wood joinery to maybe devise my own. Thanks for the video!
Nice video! Did you use a single plank for the bottom? I've been having a hard time finding a wide enough piece.. wondering if I could use wood glue to join two pieces together but I'd be afraid of any negative interactions with the koji
What are you looking for in a guide? Basic dimensions? The trouble with this is that depending on where you get your wood from and what tools you have it can be hard to create something useful. I would recommend doing something with red cedar with the inner dimensions being 9" x 13" x 3" high.

Awesome! I wanted to do more traditional Japanese joinery, but these through tenons we already hard enough for me, haha!

Thanks! I did use one piece but if you use titebond 3 in the green bottle you’d be fine to glue.
