    I use that same pan. Wish i had a gas stove. I put my pan on to heat on my glass top stove. Then make my coffee. Get my eggs ready to scramble. On serious eats a few months ago saw that Kenji adds 1 tsp of water per egg. Makes egg softer in texture and fluffier. I use butter like you. Swirl the eggs to get eggs cooked. I dont flip. I take pan off heat and put small pan lid from another pan on top. Im terrible at flipping. Let sit one minute. Using rubber spatula then roll omelette out of pan. It was my work around for not flipping. Its worked well for me. Love the flavor of eggs cooked in carbon steel. Really enjoying your channel.

    i just subscribed today; i can imagining hanging out with you .i have collected all types of cookware my whole life. i live a low carb life. hoon some people just cant cook. thx

    Nice video. I enjoy cooking in carbon steel pans. You ought to make a video making a French Omelette in a carbon steel pan

      Chef Yukimura Motokichi has videos from 2007 for his famous Omurice dish incorporating a French Omelet.

      ふわとろオムライス、プレーンオムレツが 宙を舞う!! -- done with incredible (humbling) skill.
      In other videos, he uses a fine mesh chinois to strain the eggs before cooking. He later used non-stick pans for omelets.
