Microwave the potatoes then cut into pieces sprinkle oil w some cornstarch garlic powder salt pepper paprika onion powder toss bake 20 min at 450°. Better than deep fried.

Boil them with vinager next time. Thus will make them springy and not fall apart

I think bringing the water to a boil, and leaving for 3 minutes would be better. Eight minutes, you can make mashed potatoes with them. Some people don't boil them, they just soak them in cold water for 15 minutes before baking them.

OK, but instead of placing potatoes on tray and pouring oil on them and not getting them evenly coated, place them in a bowl, pour oil and toss. That way they are evenly coated.

Fry them half way, let cool, fry them till brown.... Crispy. Takes no where near 90 minutes.
