  • One of the hardest parts about trying any new protein source is learning how to break the animal down into usable portions. This quick video will give you detailed explanations on how I prefer to break down and package my meat rabbits for my family dinners. I talk about which parts I use for what meals and what to do with what's left over after the main portions have been removed. So sharpen your knives and get cutting!

    Would love to see a video detailing your process for stock prep / roasting time and seasoning. The dispatch and butchering videos are excellent and very helpful - the carcasses are much different than a chicken so knowing where the surprises are is a treasure. Also would like to know your thoughts on preserving the stock, methods like canning or freezing etc. Appreciate your efforts and thoroughness of the videos.

      I do have a stock recipe on our website. This one is a recipe for my smoked piggy stock, but I do the same for rabbit stock except I don’t roast the bones, I use them raw. Here’s a link:

    I’m new at this thinking on leaving the city PA and moving to TX before next winter. And this is exactly what I want to do, raised my own meat and vegetables.

    I just had 8 rabbits butchered. I requested 4 whole and vacuum packed and 4 zip locked so I could break them down myself. This video is SO helpful! Thank you!

    You said in your first video that you make brine and soak for three days after you soak them in cold water for a time. What is the brine mad of just salt water?

    Quick question on rabbit. I cleaned a wild rabbit the other day and by mistake got soft feces on the back ham. I wiped it off, washed very thoroughly and soaked in water overnight. Should I be concerned about this?

      We do all of our own butchering! We’ve only taken one hog to a shop because we wanted sausage links and they botched them. So we won’t be doing that again

    What way do you use the ground rabbit? Just like ground turkey or chicken?

      For the most part yes, but because of the brine I use it makes for a wet ground meat. I kept having to drain the excess liquid off. I have since just started packaging the scrap meat in 1lb packs and pulling them out for soups!

    I just butchered rabbits for the first time. In one of the rabbits, the meat around the tenderloin has what looks like bruises, several people splotches. I wish I could add a photo. Any idea what could have caused it? Is it okay to eat?

      Possibly just a bruise. It could have fought with a cage mate

      I just butchered my first rabbit today and came across the same thing. The flies were getting to him and he wasnt very active, so I wanted to put him down before it got worse. As soon as I got to the abdomen cavity I noticed the bruising along the inside of the tenderloin, so I decided to discard that section. I kept the back thighs and upper chest section for meat. I guess he got in a fight before I bought them at auction, I'm not exactly sure.

    We just butchered 7 meat mutt rabbits yesterday. These are our first kindling that we raised. I am trying to decide if I should leave them whole, break them down, or pressure can them. I put them whole in the refrigerator to rest overnight. I don't have a meat grinder.
    Also, how do you have the neck so clean? Do you use a bolt gun? I used a piece of rebar and the broomstick method then cut off the heads and let them bleed out.

      I usually break down about half of what I butcher. I’m only feeding a family of three, so sometimes a whole rabbit is too much. And there’s more versatility in having different cuts of meat vs the whole thing all the time.
      I’m not sure what you mean by the neck being clean? I bleed my rabbits to dispatch them. Once they’re bled I’ll twist the neck to break it and then cut it off at the break.

    If you were to be planning on shredding the meat for soups, gravy and such would you just skip most the process and cook and then pick the shredded meat apart or would that make it harder to separate the fat and silver skin and tendons?

      I always leave some whole to do just that for soups. I’ll just check it over and remove any fat or hair that got stuck to the meat.

    You should do a cooking video or 2 on you and your families fav recipe. I have a batch of 9 grows out ready to butcher. Great video!

      I’m super picky. I like rabbit and squirrel in anything that would normally take dark meat chicken, such as dumplings. I don’t like it just roasted. I would also like to see how she uses them.

    How come rabbit meat isn’t eaten more commercially? It seems to be quite sustainable and easy to process.

      It's crazy sustainable, rabbits reproduce... Well, like rabbits, the meat is almost fat free, so super healthy, and they re delicious. No idea why they re not consumed more commercially. I'm thinking of starting my own herd.

      Very low yield of valuable meat (here most of the weight of rabbit went to stock or grind), combined with a fairly niche market. It's also low fat, so that makes it harder to cook with and more gamey.

    We just started raising American Chinchillas too! I haven't processed any yet, but I'm happy with the breed itself. Just chill, docile, and easy to handle.

      The nature harms animals all the time. I just seen a video where wolves had torn aprat hare _alive_ . It was truly harting and brutal. Then I came across another one, even more brutal and hurting. The crocodile ripped off face of zebra. It was alive and suffered to death. Truely sickening. You still think it was hurtin?
