Though my vision is still poor I noticed you posted a Risotto recipe made with your pressure cooker on the stove. I bought an electric pressure cooker called the instant pot a few months ago because I couldn't see the numbers on my stove. I like your idea of making stock in the pressure cooker. I always enjoy watching you cook. I hope you are enjoying good weather down under. PS. My husband Perry is my scribe for now.

We love our pressure cooker and use it for many things, it makes wonderful corned beef, soups, stews, stocks and risottos in minutes not hours so it's an economical cooking option. Thank you very much for your kind feedback we are enjoying outstanding weather at the moment but believe it or not we are in Anchorage Akaska after having sailed to Seattle from Sydney, Australia, spending a couple of days there then a day in Vancouver and sailing to Seaward. Tonight we board a flight to San Francisco and travel around before leaving Los Angeles arriving back in Australia around mid June. I am looking forward to getting back into my own kitchen and perfecting some of the recipe ideas we have collected on our travels. It's been a long and fulfilling holiday and have visited many new and exciting locations. Warmest regards to you and Perry you are lucky to have him to help and support you during your recovery.;-))
I am a sweet cooker, and who cook with presure pot is my mother you know that pot is very dungerous, you coller it down with wather, my mother also teach me to wait all the presure comes out to open it, or otherwise could be an accident, the lid coul fly away with your hand, or the hot food could explode in your face.
Thank you very much for your feedback Rute, your mother is perfectly correct with the older style Pressure Cookers, the newer models these days actually state in the operating instructions that it is perfectly safe to cool the cooker under cold running water until the pressure has abated. Doing this prevents over cooking, food sticking to the bottom and allows you to thicken sauces or add more ingredients if required. In fact if pressure is still present within the vessel it will be impossible to remove the lid thus avoiding the dangers you mention. If you are using an older model by all means allow it to cool naturally if that us your preference. You might also consult the manufacturer if your particular brand of pressure cooker to clarify this point. I cannot speak for all brands but rest assured mine is perfectly safe and actually recommended to use as I have shown. I would never do anything intentionally that may harm our viewers.
