Leftover Ribs Benedict Recipe

    In this video I make a dish with leftovers. The leftovers are ribs and the dish is ribs benedict with grit cakes.

    RECIPE
    Grits
    2 Cups Whole Milk
    1/2 Cup White Stone Ground Grits
    2 tsp Salt
    2 Tbsp AP Flour
    1) Place a saucepan over medium heat and add your milk. Heat until wisps of steam start to form. Once those form, add all of your grits and whisk continuously for about 5 minutes or until thickened. Season with the salt and mix in the flour.
    2) Place into the fridge for at least 2 hours or in the freezer for 40 minutes.
    3) Once chilled, place a saute pan over medium high heat along with your butter and olive oil. Add 1/4 cup of your grits at a time and spread evenly. Cook on one side for 2-3 minutes or until golden brown. Flip and repeat.
    Meat and Veg
    1 Scallion Stalk
    1 Lb Leftover Rib Meat
    1 tsp Olive Oil
    1/2 tsp Smoky Seasoning
    1) Separate your scallion into the whites and the greens. Finely chop the whites and slice the greens on a bias.
    2) Chop up the leftover rib meat into bite sized pieces.
    3) Add the olive oil and scallion whites into a pan that's set to medium high. Saute for about 1 minute or until fragrant. Add the meat and smoky seasoning and cook for an additional minute or two.
    Sauce
    6 Tbsp BBQ Sauce of your choosing
    1/3 Cup Sour Cream
    1) Add both items to a bowl and whisk to combine.

    Carnivore here, can't do the grits, rest looks yummy. Put the rib bones in your freezer bag waiting to make bone broth!
