  • An amazing experience to have on this episode. A fantastic location with friends and family awaits you on this video. Getting your quail cook sous vide is just a bonus on this video. I also show a new technique I have been practicing for quite some time on how to get amazing flavor to any type of protein.
    HOW TO COOK QUAIL SOUS VIDE
    I cooked it for 2hrs @ (149°F / 65°C)
    INGREDIENTS * I used for this sous vide cook.
    Quail
    1 1/2 cup of plain yogurt
    1 tablespoon of salt
    1 tablespoon of garlic powder
    1 tablespoon of chili powder
    1 teaspoon of pepper
    1 tablespoon of tumeric

    This video was 99% perfect. The 1% is because it's a sin that you didn't use the sear song when you seared the quail.

    Brother from India here. Not sure if someone has written this already (the video is over 2 years old), but I felt extremely proud to see the smoking technique. It is something that has been used in India traditionally. It's called "dhungar" here.

    I would love to see more wild game sous vide ideas. I've been experimenting with different meats from elk to sharptail grouse and the biggest thing I have learned is not all birds are the same and not all mammals are the same.

    In India, this method of smoking is very commonly used in the home. But we use a slight variation on this charcoal smoking method. We place the heated charcoal into a hollowed out onion and then pour clarified butter over it. The onion imparts a superb added flavour to the smokiness.

    Please don't black out the birds being shot. If people are too sensitive to watch an animal being humanely harvested, they shouldn't eat meat and should just be a vegetarian.
    We are so disconnected from where our food comes from now that most kids (maybe some adults too) don't realize the cheeseburger they are eating was once a living animal.
    Acknowledging that the meat we eat is the result of the death of an animal is all about respecting the life of that animal. Blacking out the screen just contributes to people's ignorance about how food makes it to their dinner plate.

    You gave a time stamp for those who didn't want to see the hunt, so .... Why darken the video for the shots? Makes no sense to me.
    Quail hunting is almost nonexistent here anymore. Glad you got a chance to do it, even if it is on a ranch.

    My favorite video of yours ever! I do not even bother with the legs(they are very small) on quail I hunt, I find it much easier to just breast them. I think watching a good dog work the birds is the best part.

    The hunt was very interesting, especially with the drone footage. The hunting video adds a new dimension to your channel. Yes... please do some more videos like this one... maybe fishing and hunting for other types of game. It would be great to see a fishing trip and the fish being prepared for sous vide cooking.

    I love your videos but I was disappointed to see you guys shooting downwards at 1:37. That's not a good habit when you're hunting with dogs. One mistake and your hunting companion is a goner. It should have been the first thing you learned.

    This is way late but I just found this. Really happy to see the hunt section. I had such a great time when I went on a quail hunt before and this reminded me of that experience. I was glad to see that you appreciated the other wildlife around you too.

    As always your ideas about the kitchen is mostly minimalist. That is not a bad thing when you are precise and and it works. Just that you would have converted alot of "charcoal meat lovers" to much healthier meat lovers.
    Keep coming up with these crazy useful 10cent ideas. Because there are some people who do hate using 5 kilos of charcoal for 2kilos of meat, and cleaning the bbq is another obstacle.
    Suis vide to many older people is another chance to gain their love for meat back.

    I love your videos guys and i love the friendship you guys have, you had told us in the video to go to a certain point to avoid the kill part of the hunt so you didn't need to edit the kill parts, i admire and respect what you have done here but people had fair warning. But hey great video guys you put a lot of effort into these vids and i love watching them cudos from Australia 👍

    Great video guys!
    The burning charcoal embers were extinguished by the oil. I believe your smoke was from the olive oil burning making a smoke vapor similar to dropping oil on to a hot electric range element. Maybe hickory flavored mosquito coils?

    Great vid, I'll comment on the smoking trick, I would suggest that you don't want to use oil to smoke meat. Oil past its smoke point is not good for you. As a suggestion, get a few wood chips soaked in water and put them on your heated charcoal, that should give enough smoke. Because of your vids I'm buying sous vide equipment, I'm a big fan!!

    This channel gets better and better. I'd love to see the full process but I understand that there are people who don't want to see from where the meat comes from and will make a huge deal of it. Something has to die for something else to live. Ofcourse with environmental respect and I only see that on this video.

    I grew up in Florida and it was always a running joke that the deer were smaller than the dogs. Living in north Arkansas now, I really see it the deer here are so much bigger. Everything looks so familiar, the pines, palms palmettos. Take Ninja fishing. That would be fun to watch.
