After watching this I went straight out and bought the smoke gun. Had a couple pound strip loin left over from bbqing the day before. Sliced it fairly thin, put it in a zip lock bag smoked it with Hickory overnight. Wow. Wow. What a great addition. I'm smoking everything.

Based on your review, I purchased a Breville smoke Gun and love it. I've used it on steaks and burgers with excellent results. It obviously does not have the strong smoke flavor of a traditional smoker, however, it gives you the perfect amount of smoke to give the steak or burger a grilled smoke flavor. AMAZING!

A tip about smoking the shrimp salad (or anything like that) Since smoke is a surface/ near surface treatment, and you decided to smoke the shrimp salad twice anyway, be sure to stir between sessions. that way you will get a better / more consistent smoked result. (Smoked Mac & Cheese, one of my favorite BBQ side dishes)

This might be one of my new fav Guga vids... Thanks Guga, you guys have too much fun, it just aint right!.. A thought just came to me.. Every Christmas I cook a Ribeye Roast, have always wanted some smoke flavor in it, but in the winter in Iowa its just crap outdoor weather and a pain in the arse to go in and out carrying an 8lb rib roast. So... This year im going to do a soux vide rib roast, indoor sear with a high temp heat gun, then let the roast sit under a big glass bowl for 15 mins with some indoor smoke while everyone gets seated for dinner. that will let the roast sit and rest AND gets some smoke flavor as well!
I own a Breville smoke gun - it's fantastic. My favorite use for it is cheese - smoke a block of name brand cheese and re-wrap it in plastic wrap. The smoke flavor starts strong and slowly mixes with the cheese as it ages in your fridge. Fantastic. The trickiest part, IMO, to using the gun is not having the spices on your food overpower the smoke. Especially on fish.
Thank you so much for your great (and honest) videos. With the Smoking Gun, may I suggest you use a trivet or metal grid of some sort to lift the meat off the flat bottom for a better all around smoke flavoring. Also use a soft bag instead of a hard bell. A soft bag makes it easier to seal around the tube's mouth, so less smoke can escape.

Trying it with salmon. I have done cure for 24 hours and cold smoke for 6-12 hours with a sawdust burner "snail", then sous vide 115F for 90 min to pasteurize (vulnerable folks in my home). I get my gun this afternoon. I'm going to sous vide a fillet of salmon 115 for 2 hrs this morning & smoke it when the 'Zon delivers the gun. I'll let you know. I know it will be different than the cured fillet, but if it's really good, it would save me so much time.
Sous vides, smoke guns, wireless bluetooth thermometers, granitestone non stick pan, as my recently gotten holiday kitchen bling, these are a few of my favorite things!
How about filling the sous vide bag and just weighing it down? (I usually use the small basket from a steamer) I'm going to try it today on some boneless chicken thighs seasoned with Sichuan pepper and violet sea salt using hickory, and finishing it all of with some hoisin/tamarind BBQ sauce

I've been doing my prime rib eye for 90 minutes at 135 and found I like that a bit better than the two hour bath. Here is an apartment dweller pro tip. Filling my kitchen with billows of smoke from a pan sear sucks. I have a balcony though and put two and two together. I get two of my cast iron pans smoking hot then take one outside on the balcony and sear one side. While that is going on I get the other pan and sear the other side plus edges. I found one pan doesn't hold enough heat to get a good sear on both sides but two pans works just fine. No smoke in the apartment and a joyous dinner.
OK, I have used the smoke gun but I do smoke my ribs in a vacuum seal bag, which you can buy any size to fit, blow the smoke into the bag, inflates with smoke, then zip lock, and redo when u see smoke goes clear. I do this about every half hour 3 times. works great. I do this because I live in a condo.

Try using a metal grid or trivet next time, to lift your steak off the flat surface. The smoke flavor will be more AMAAAAAZING. 😀
