    Welcome to a what I eat in a day video! I'm a student who loves to eat simple, quick, and delicious vegan food. This video is full of meals that you can incorporate into your every day life. I'm an intuitive eater that aims to eat mostly whole, nourishing foods, but also enjoys food freedom! I don't label any foods as "good" or "bad", I just listen to what my body needs and wants.     Chili mac and cheese:
    Ingredients:
    1. 1/2 onion
    2. 3 cloves minced garlic
    3. 1/2 cup chopped bell pepper
    4. 1 cup chopped broccoli
    5. 3/4 cup tomato sauce
    6. 3/4 cup white beans
    7. 1/2 cup green lentils
    8. 1 cup macaroni noodles (uncooked)
    9. 1/2 veggie bouillon cube
    10. 1/2 cup vegan cheese of choice
    11. 1 tbsp vegan mayo
    12. 1/4 cup nutritional yeast
    13. chili powder, extra salt, oregano, and lemon pepper to taste
    Directions:
    1. Get some water boiling for your pasta (have your pasta cooking)
    2. Chop up garlic, onion, pepper, and broccoli and add to pot with olive oil on medium-high heat (let cook for 5-7 minutes)
    3. Add tomato sauce, beans, lentils, bouillon, and extra spices and reduce heat (let simmer for 3-5 minutes)
    4. Add in macaroni (should be about 3/4 done), about 1/4 cup of pasta water, cheese, mayo, and nutritional yeast
    5. Let simmer until pasta is fully cooked an enjoy!!

    I went vegan when i was 13. I was the opposite of you, I first decided to go vegan for environmental reasons, then I learned more about the animal part of it and a while afterwards I learned about the health benefits of a whole plant food diet. I also struggled with disordered eating witch made me (slightly) hesitant to go vegan because that would mean I couldN'T eat low calorie foods like egg whites, lean meats, shell fish and fish witch are probably a lot lower in calories than you think they are more so than many fruits and vegetables actually. And Sometimes the vegan option is the highest calorie on the menu

    Your description of the perfect partner seems a lot like you, if that’s not a weird thing to say. I try to only watch gentle people these days. I’m happy that your boyfriend fits the description! And I’m just about to go and make that mac and cheese dish, looks delish.

    A lot of vegan foods are a lot higher in calories than a lotvnon vegan foods and it bugs me when people say that vegan foods are lower in calories. Om the SAD diet plant based foods are typically higher in calories (sugar, oil, dry cereal, chips...) even some healthy vegab foods (nuts, beans, whole grain cereals...) compare to an egg white (~15kcal) or a slice of deli meat or leab bacon (~20kcal) and I am aware there are many low calorie plants such a high water fruits and high water vegetables and high calorie animal foods such as butter, natural cheese and lard but this isn't always the case.

      I kinda learned alongside going vegan, so 15 ish!
