Welcome to another what I eat in a week! I'm a grad student who loves to eat simple, quick, and delicious vegan food. This video is full of meals that you can incorporate into your every day life. I'm an intuitive eater that aims to eat mostly whole, nourishing foods, but also enjoys food freedom! I don't label any foods as "good" or "bad", I just listen to what my body needs and wants. One-pot pasta
Ingredients:
1. 1 cup broccoli florets
2. 1/2 zucchini
3. 4-5 sun-dried tomatoes
4. 1/2 bell pepper
5. 2 cloves garlic
6. 8-10 cherry tomatoes
7. 1.5 cups dry pasta of your choice
8. 3 cups water or veggie stock
9. 3/4 cups tomato sauce
10. Oregano, lemon pepper to taste
11. 1/4 a veggie bouillon cube (if you're not using stock)
12. Vegan cheese (optional)
Directions:
1. Add veggies and garlic to a large pot
2. Add pasta, tomato sauce, water/stock, and seasonings
3. Bring to a boil
4. Reduce heat to a simmer and let cook 10-12 minutes (until pasta is at desired tenderness)
5. Top with vegan cheese (optional)
