    Serves: 4 to 8; makes 1 half-sheet or 2 quarter-sheet pizzas
    Prep time: 2 hrs 30 min

    INGREDIENTS
    1 tablespoon olive oil, plus more for fingertips
    1 recipe Jim Lahey’s Basic Pizza Dough (below), or your favorite
    2 1/2 pounds (about 5 small-medium or 3 large) zucchini or other summer squash, trimmed
    1 1/2 teaspoons fine sea salt
    2 cups (8oz) coarsely grated Gruyère cheese
    2 to 3 tablespoons plain breadcrumbs
    Jim Lahey’s Basic Pizza Dough:
    2 cups minus 1 tablespoon (250g) all-purpose or bread flour
    1 1/4 teaspoons (5g) instant or active dry yeast
    1/4 teaspoon (heaped) fine sea or table salt
    2/3 cup (150g) room-temperature water

    I made this last night. It is an AMAZING pizza. I used half the amount of Gruyere (high cholesterol) and more zucchini (sue me). It still stayed together quite nicely. Used a Trader Joe’s garlic herb crust (hangs head ... removes chef hat). The pepper was an important addition. I used a few social crackers instead of bread crumbs. I’m in love!!

    This has become one of our family favorites. It's heavy in the rotation as a "it's late. I need to eat an hour ago and I'm tired" meal. I'm celiac, so I pop it onto a frozen GF pizza crust, but other than that I keep it pretty true to this version. I usually add a little more zucchini (I like it thick!) And (very) occasionally, I'll add a few other things or sub out some of the gruyere if I don't have it (thanks Covid) but I think it's perfect as is. It's an excellent fast, delicious, healthy, veggie-filled meal. Thanks so much for posting it. It really has become something I look forward to.

    I've already made this twice, once with zucchini and 2nd time with yellow squash. (I used a cotton cheesecloth to squeeze out all the water). Like all pizza dough it tasted better if you refrigerated 1 to 3 days before using. I also added some mozzarella cause my son wanted more cheese! Thank you for this excellent recipe.

    Wouldn't it be easier to dump the zucchini onto a dish towel, and squeeze that?? That's how I was taught to make zucchini bread.

    I tried the recipe on the weekend. it was really good, very flavourful. The only thing is with that amount of dough, 250kg of flour, i only manage to make about 1 1/2 9"x13" size pizza instead of 2. and the pizza was bit stuck with glass bakeware.

    And why would you not use a strainer that can go in the sink to help the zucchini from sitting in it's own juices?? I get the end squeeze, but it seem to me like extra work w/ that kind of strainer.

      Judie Garnett absolutely yes, put it in colander in sink to rest and drain some. To squeeze the zucchini later, try using a potato ricer. I have small hands and it takes forever to squeeze grated zucchini. I read somewhere to use a potato ricer to squeeze handfuls of grated zucchini. Genius.

    Will make, sounds delicious. I've always used zucchini in thin round slices w/mozzarella with a thicker crust, this is a nice change ....thanks for the tips, I've been a reader of smitten kitchen for years and I really enjoyed this! Also, when I first read the title I thought, big deal my Italian grandmothers made this bec that's what they had from the garden that day.....then at around 2 min in the video Deb talks about simple ingredients and the way "most people cook at home" yes!! 😃

    My family follows the healing and disease-fighting way of eating called The Ketogenic Lifestyle since June 2016. I am absolutely thrilled to see this recipe as there are a few yeast-risen recipes that include vital wheat gluten and grain-free alternatives (almond flour, coconut flour, or for those follow low-carb, they use cassava or tapioca flours) that make for a pretty delicious pizza dough. I like how your camaraderie was infectious and humorous. I would definitely use grated Parmesan instead bread crumbs by this definitely looked delicious. I would have added a drizzle of excellent olive oil just before serving, but man...it looked great! I will definitely check out “Smitten Kitchen” to see if you upload some actual low carb or Ketogenic recipes. Would you please think about doing so? I’m using Keto to reverse my Type 2 Diabetes and it was instrumental in helping me help my oncology team kill my Stage 3, Class C (yes, just a single step above terminal) breast cancer. I’m enjoying nearly three years in full remission. Food is no longer just pleasure, it’s helping me choose between life or a painful death. I don’t mean to sound overly dramatic, but it’s true. Keto helped me endure the ravages of the taxol chemotherapy, the horrors of Stage 2 neuropathy in my hands and feet as well as overcoming the weekly death of GI motility. Food, truly good and delicious food, is so important when you are feeding someone you love to help them, not adding carbohydrates or glucose (which cancer NEEDS to live, thrive and spread) to their diet because “it’s easy”.

    what about tomatoes (crushed , diced or...) on it as well. i love zuccs idk about just even with a gruyere cheese (which is one of my fav cheeses) and a fresh sweet basil shif?

    remember, zucchini is GMO - so use either organic or 4 digit growing numbers so it's conventional. (the 4 digit number is on a sticker on the fruit indicating where it is grown). but how do you make the dough? this is so confusing

    Totally inaccurate . I have the Lahey My Pizza book and the zucchini pie in that book DOES have chili and anchovies and other ingredients. The pizza in the video is great, but why lie and say it’s from the book abs only 5 ingredients? They are completely different. You can stop the video and zoom in on the page when she flips to it to see for yourself
