2 cups heavy cream
1 tablespoon finely grated lime zest, plus more for serving
1/2 cup freshly squeezed lime juice

This is such a great recipe. I made it in India with Marie biscuits and 3/4ths of the 400 grams can of condensed milk (the recipe says 2 but that sounded too much) and the balance was perfect. Also quick trick, if your limes don’t zest, soak them in water and freeze for a few hours. The firmness helps the peel zest more easily.
I tried it and got rave reviews from everyone. It's a truly wonderful recipe. Thank you for sharing

Note: to get the thickening reaction with citrus and dairy, it's got to be full fat. Skim milk will curdle.

Mine never did thicken too well until It was in the fridge. Man was it tasty though!! I used Pepperidge Farm Chessmen cookies instead of Ritz crackers. Everyone loved it! Whole thing is eaten and gone!

I love this recipe! I have made it several times and always get rave reviews and people coming back for seconds. It makes a good amount and is super easy and delicious. I don't love sweets and for me, this hits the perfect spot of sweet and salty.

A classic recipe of Mexican homes. But we make it with Maria crackers. And it also works if instead of heavy cream, you use evaporated milk. For a fancier version, add cream cheese to the mix and top each layer with candied pecans!!!
I made this but with lemons. I followed the recipe quantities replacing only the limes with the lemons. Absolutely delicious. The cook used a spatula to lick the bowl clean instead of sticking her face in the bowl, because she had guests.
I used my lasagna dish... 8-1/2 x 13-1/2 ... it was a bit too large, so to have a third layer of ritz crackers, I topped it with a layer of whipping cream (2 cups of cream) and sprinkled it with lemon sugar. I used the tsp of lemon zest added to 1 tablespoon of sugar.
I will make this again for sure.

1.5 sleeves of saltine crackers crushed with 3 tbs. of sugar and enough butter to make it all clump together also works. And, btw, the reason you roll a lime or lemon on the table is to break down the cells in the citrus, thereby releasing the juice.
I'm making this for Thanksgiving dinner today. It is one of my favorite recipes. I add vanilla extract to the filling.

And rolling it on the counter also helps to release more juice. Using a reamer and/or clamp juicer helps get the most out of each lemon or lime. Zest first and then squeeze the hell out of them!
That's how my grandmother taught me to zest when I was a kid. She was really good at it though and it went quickly.

Lines (the vast majority at least) do not have seeds. So while the juice up trick works for lemons, limes don’t need it. Which is good because a reamer is going to increase yield by a significant amount.

I’ve made this a number of times and it only gets better by the third day, if it lasts that long. Add real whipped cream on the top. Cuts the sweetness

You can use a cheese grater too
It’s a very useful tool. You can grate garlic, ginger, nutmeg, citrus zest, etc. It cleans easily, stays sharp for a long time...
I got one and it changed my life! I use it more than I thought I would. My favorite use for it is grating fresh parmesan cheese on to pasta dishes. I used to buy the powder kind but never again! There is nothing like fresh grated Parmesan on my pasta primavera. Worth investing in for sure.

Soak limes in hot water possibly after zesting so as to get more juice. Plus if you cuts the cheeks off all sides you can squeeze more juice without a juicer

I love this recipe. It's quick, creamy, and tart. I changed it just a bit by using 1 cup of heavy cream and 8 Oz of cream cheese with 3/4 cup of lime juice. I would love to hear what you think of these changes.

Aldi sells a roll of Maria's for .49 cents.
They also have them at the 99 cents store. I've found them as little as three sleeves for a dollar which is way cheap. And if you've never tried them Nutella, you need to. So yummy.

This sort of looks Tiramisu like.
If you dip the crackers in milk before you go in, they'll soften faster. Then you don't have to wait as long.
