  • The secret behind this brilliant veggie burger recipe was right in front of us. As Joe Yonan writes, "In the ongoing quest for the perfect veggie burger recipe, at a certain point a realization occurs: wasn’t the perfect veggie burger created long ago-in falafel?" Yonan swaps out chickpeas for black beans and adds chipotle, cilantro and sweet potato to create a perfectly crisp-on-the-outside, tender-(but not mushy!)-on-the-inside veggie burger.     INGREDIENTS
    For the falafel burger:
    1 cup dried black beans, soaked overnight and drained
    1/2 cup chopped white onion
    1/2 cup lightly packed chopped cilantro leaves and tender stems
    4 garlic cloves, chopped
    2 teaspoons kosher salt
    2 teaspoons ground chipotle chile (or substitute 2 teaspoons adobo sauce from canned chipotles in adobo)
    1 cup mashed, cooked sweet potato (the easiest way is to poke the potato with a fork, microwave till soft, then peel and mash)
    grapeseed or other neutral vegetable oil, for frying
    8 soft burger buns, such as brioche or potato rolls, (optionally) lightly toasted
    1/2 cup Chickpea Aioli (recipe follows) or vegan or traditional mayonnaise
    Mustard, ketchup, or both (your choice)
    8 leaves romaine or iceberg lettuce
    Flesh of 2 ripe avocados, sliced
    1 small red onion, thinly sliced
    2 tomatoes, sliced
    For the chickpea aioli:
    1 garlic clove
    1/45-ounce can of no-salt-added chickpeas) cups aquafaba (from one 15-ounce can of no-salt-added chickpeas)
    2 tablespoons cooked or canned no-salt-added chickpeas
    3/4 teaspoon Dijon mustard
    1/2 teaspoon kosher salt, plus more to taste
    3/4 cup grapeseed or other neutral vegetable oil
    1 tablespoon fresh lemon juice, plus more to taste

    These look awesome! Cannot wait to make them. We used this same method of soaked, uncooked beans for the veggie burgers we made at a vegan cafe, where I worked.

    I am not vegetarian and can't wait to try this recipe!!! I love all the components like black beans, garlic, cilantro, lemon, sweet potato and chipotle. So I loved him and his book so I will order it soon and enjoy everything there is to offer. Thanks

    I thought that putting mashed sweet potato into store bought falafel mix would be great, that the warm, Middle Eastern spices would marry well with sweet potato. Yes, it did! I tried it tonight and we loved it! Highly recommend! ❤️

    I made this today. It was a hit! Did not have enough sweet potato so I added a couple of Yukon golds to supplement. The patty was not mushy and the outside was crisp. Will definitely make it again.

    First off, these look delicious and I will be making them soon. But seriously, you guys have the most chill cooking channel out there. I go into a state of zen watching every video. Keep it up. Unfortunately, it means you can't ever have Gordon Ramsay on your show though.

    Made this, it was good! Will probably use this technique for any future black bean burgers I make. Usually black bean burger recipes have a grain in it to dry it out, I like that this one doesn't!

    I love black bean burgers and will definitely try this recipe. We have one ready-made here that also adds cashews and smoked paprika, so I will definitely try Joe's original but also a variation with cashews. :)

    I just made it and its FANTASTIC!! I do not like vegy burgers for the very reasons mentioned! Those are so so good!! Buying cool beans =)

    Looks very very yummy and I have to try it...
    I also have to look up how to purchase Joe's book here in Germany..
    English/American books are soo much more expensive than in Germany (and if you buy them over here even more)..
    Any advice??
    And Joe : since my childhood I'm a beanlover too!Going nuts for the taste/mouthfeeling..
    That must be something very archaic because there are soo many bean based diets all over the world🤔💖

      i d freeze them before cooking. And then let them come to temperature before cooking. I don’t think how this would affect them negatively

    Hmmm… I followed this recipe to the letter and the patties completely fell apart in the oil. I was left with an oily mess in my pan.
    Maybe I did something wrong, but I wouldn’t know what…
    Anyway, maybe have backup leftovers when you attempt this recipe to avoid hangriness in case of failure.
    The aquafaba aïoli, however, worked superbly and is absolutely delectable.

    Wish there was more information shared on how to treat/deal with the black beans. I followed the instructions on soaking the beans and then did exactly as they did in the video for blending them in a food processor and they wouldn't break down like chickpeas normally would whenever I make falafels.
    I'm glad I read up on some things and decided to compost what I had as I didn't like the sound of possibly giving myself food poisoning due to undercooking the beans.
    If you get this to work for you, props. But for me it isn't worth the risk of retrying it and I'll just stick to the falafel recipe I know and love already.
